i have always been a huge fan of kurma or south indian coconut-based curry. i have posted quite a few types of kurma, yet every time i visit a south indian restaurant i am offered with uniquely flavoured and tasted kurma recipe. i know every person have their own take on this kurma but it just amazes me. all my previous kurma recipes are prepared with homemade masala by mixing all dry spices and herbs to get kurma curry flavour. but this has to be one of the simple yet most effective kurma recipes. basically, i have used shaan mix veg curry powder and mixed it with coconut to form a thick paste. the curry powder does have the same set of dry spices, but perhaps the ratio is different. hence you would get a different flavour and taste to this kurma curry. i certainly believe that you would love this, and do try and serve it with your friends and family.

furthermore, some more additional tips, suggestions and variations to the simple south indian curry recipe. firstly, the set of vegetables used in this recipe is open-ended and you can use them as per your preference. yet i would suggest keeping it simple and more importantly dicing it in small cubes so that it gets cooked quickly. secondly, you can use any brand or any type of spice mix for this curry. this recipe post is sponsored by shaan masala and hence i used it. lastly, on top of shan curry powder, you can also add fennel seeds and a hint of mint leaves to have a different and unique flavour and taste.

Ingredients
  

for masala paste:

  • ¾ cup coconut, grated
  • 2 tbsp cashew
  • 2 tbsp vegetable masala
  • ½ cup water

for curry:

  • 2 tbsp oil
  • 1 tsp cumin
  • 1 tsp mustard
  • few curry leaves
  • 1 onion, finely chopped
  • 1 tsp ginger garlic paste
  • 2 tomato, chopped
  • 1 potato, chopped
  • 1 carrot, chopped
  • ½ capsicum, chopped
  • 5 beans, chopped
  • 2 tbsp peas
  • 2 tbsp sweet corn
  • ½ tsp salt
  • 2 cup water
  • 2 tbsp coriander, finely chopped

Instructions
 

  • firstly, to prepare the masala paste, in a mixer jar take ¾ cup coconut, 2 tbsp cashew and 2 tbsp vegetable masala.
  • grind to smooth paste adding ½ cup water. keep aside.
  • in a large kadai heat 2 tbsp oil, add 1 tsp cumin, 1 tsp mustard and few curry leaves. splutter the tempering.
  • now add 1 onion, 1 tsp ginger garlic paste and saute until golden brown.
  • further, add 2 tomato and saute until they turn soft and mushy.
  • add 1 potato, 1 carrot, ½ capsicum, 5 beans, 2 tbsp peas and 2 tbsp sweet corn.
  • also, add ½ tsp salt and saute for 2 minutes or until the vegetables are well combined.
  • add in the prepared masala paste and cook for 2 minutes or until the raw flavour is gone.
  • further, add 2 cup water and mix well adjusting the consistency.
  • cover and boil for 10 minutes or until the vegetables are cooked well.
  • add 2 tbsp coriander and mix adjusting the consistency.
  • finally, enjoy mix veg curry with roti or rice.
