POTATO - 3 BOILED

firstly, in a large bowl take 3 potato, ½ onion, 1 chilli and ½ tsp ginger paste.

PEPPER POWDER

also add ½ tsp aamchur, ½ tsp chaat masala, ½ tsp pepper powder, ¼ tsp  turmeric, ½ tsp garam masala, ½ tsp cumin powder and ¼ tsp chilli  powder.

CORINADER - 2 TBSP

further add 2 tbsp mint, 2 tbsp coriander and ¾ tsp salt.

COMBINED WELL

mix well making sure all the spices are well combined.

BREAD CRUMBS

now add ¼ cup bread crumbs and mix well.

SOFT MIXTURE

make sure a soft dough is formed. add more bread crumbs or cornflour if the mixture is loose.

CORN FLOUR - 2 TBSP

now prepare the slurry by taking 2 tbsp cornflour, 2 tbsp maida, ¼ tsp pepper powder and ½ tsp salt.

NO LUMPS

add ½ cup water and prepare a smooth lump-free batter

SHAPE WELL

further pinch a small ball sized aloo kabab mixture and give a diamond shape or shape of your choice

DIP IN SLURRY

dip in slurry coating uniformly.

COATED WELL

now roll in panko bread crumbs to have a crispy outer coating

SHALLOW FRY

shallow fry in hot oil keeping the flame on medium.

FLIP OVER

flip over and fry on both sides until it turns golden brown.

DRAIN OFF

drain off over kitchen paper to remove excess oil.
