Ingredients
  • 1 cup basmati rice or any rice
  • ½ capsicum, cubed
  • 10 mushrooms, thily sliced
  • ½ onion, finely chopped
  • 2 tbsp oil
  • ½ cup peas, fresh / frozen
  • 1 star anise
  • 5 black peppers
  • 1 tbsp cumin seed / jeera
  • 2 cardamom / elaichi
  • 1 mace blades / javitri
  • 1 bay leaf / tej pata
  • 3-4 cloves / lavang
  • 1 tbsp garam masala powder
  • 1 tbsp chilli powder
  • ½ tsp turmeric powder
  • 2 tbsp lemon juice
  • 1 inch ginger
  • 2 garlic cloves
  • 1 green chilli
  • salt to taste
Instructions ( 1 cup =255 ml)
  1. soak rice in water for 30 mins
  2. add mushrooms to boiling water and cook them for 15 mins.
  3. all the mushrooms should be immersed and keep it for 15 mins.
  4. add oil and add black peppers, cumin seed, crushed cardamom, mace blades, bay leaf and cloves.
  5. add finely chopped onion and saute until they change color.
  6. now add ginger-garlic-chilli paste and saute it for a minute.
  7. now add strained mushrooms and toss it few times.
  8. keep stirring till mushrooms becomes translucent.
  9. now add strained rice and toss it for 1-2 minutes.
  10. add garam masala, chilli powder and turmeric powder. give a gentle mix.
  11. now add peas capsicum. fry it for a minute.
  12. add 2 cups of water.
  13. add salt as per your taste and give a mix. increase the flame to medium and close with a lid.
  14. cook it for about 15 minutes on low flame.
  15. now add some pepper powder if you prefer to have it spicy.
  16. your mushroom pulao is ready with salad or raita.

  1. firstly soak the rice in water for 30 mins and drain the water completely.

  3. in a pan, add 2 cups of water and bring them to boil. add some salt while boiling.

  4. turn off the flame and add sliced mushrooms. all the mushrooms should be immersed and keep it for 15 mins.

  5. in a large non-stick pan add 2 tsp oil. once the oil is hot add black peppers, cumin seed, crushed cardamom, mace blades, bay leaf and cloves.

  6. saute until they leave aroma. add finely chopped onion and saute until they change color.

  7. now add ginger-garlic-chilli paste and saute it for a minute.

  8. now add strained mushrooms and toss it few times.

  9. keep stirring till mushrooms becomes translucent.

notes:

  • you can also add coconut milk or yogurt to have change in the taste.
  • in addition, add chilies are per your spice preference.
  • you can also use ½ cup of coconut milk which gives a nice flavour but adjust water level accordingly .
  • furthermore,i usually use 1:2 cups of rice:water ratio to make slightly moist.
  • finally, always pre soak basmati rice for 15-20 mins and use.

  1. I tried this recepie it was very spicy!! Chilly powder can be reduced to half tbsp. Taste was superb!! Served with onion raitha!!

    • perhaps it could be because of your red chillies. it might be spicy. i have used kashmiri red chillies which is mild. perhaps reduce the red chillies accordingly
