my first encounter with veg spring rolls recipe was during my transit holiday in honkong. we had a brief transit holiday in honkong for 3 days whilst visiting india. i was bit skeptical about veg food in honkong. however, to my surprise i was able to find several vegetarian food recipes, especially savory recipes. out of them i liked the vegetarian spring rolls and veg momos recipe the most. especially when served with sweet chilli sauce or momos chutney, it is a lip smacking snack.

furthermore, the history of spring roll is very interesting. it is believed that the spring rolls recipe originated from mainland china. moreover, it is also believed that the recipe was a seasonal recipe. it was particularly prepared during spring season with the new seasons fresh vegetables. hence, the word ‘spring’ is attached to the name of this dish. however, another theory contradicts and says veg spring rolls is originated from vietnam. in vietnam it is usually served with minced pork and egg.

Ingredients
  • 2 tsp oil
  • 2 garlic cloves, finely chopped
  • 1 inch ginger, finely chopped
  • 1 carrot, thinly shredded
  • 4 spring onions, finely chopped
  • 1 cup cabbage, thinly shredded
  • 1 tsp sugar
  • 1-2 tsp chilli sauce
  • 1 tsp soy sauce / soya sauce
  • 2 tsp vinegar
  • 1 tsp black pepper, crushed
  • salt to taste
  • 1 tsp corn flour
  • 7 spring roll pastry sheets / wrapper
  • 1 tbsp maida / all-purpose flour / plain flour
  • oil for deep frying
Instructions ( 1 cup =255 ml)
  1. firstly, in a large kadai add oil along with finely chopped ginger and garlic.
  2. also add finely chopped spring onions.
  3. saute them for a minute or till the raw smell disappears.
  4. furthermore, add shredded carrot and cabbage. saute them.
  5. also add sugar, chilli sauce, soy sauce, vinegar, black pepper and salt.
  6. mix everything well.
  7. furthermore, add corn paste.
  8. mix well and keep aside.
  9. meanwhile, take spring roll pastry sheet and place spoonful of prepared stuffing.
  10. pull and fold over the corner tightly till it reaches half the sheet.
  11. furthermore, fold over sides like a envelope leaving no air pockets.
  12. create crease and roll further.
  13. at last, apply maida paste around the corners and seal the edges.
  14. furthermore, deep fry the spring roll or bake them at 320 degrees F.
  15. deep fry till they turn golden brown stirring occasionally.
  16. once they turn golden brown, drain them over absorbent paper.
  17. finally, serve crispy veg spring rolls hot with sweet chilli sauce or tomato sauce.

  7. furthermore, add corn paste. this helps to bind the vegetables together, and ease the rolling process. to prepare corn paste mix 1 tsp of corn flour with ¼ cup of water.

  8. mix well till all the corn paste is dried up and mixture turns slightly sticky. keep aside and allow to cool.

  9. meanwhile, take spring roll pastry sheet and place corner towards you. or in a diamond shape.

  10. take a spoonful of prepared stuffing and keep at one corner, leaving some space to fold.

  11. spread the stuffing in elongated shape. pull and fold over the corner tightly till it reaches half the sheet.

  12. furthermore, fold over sides like a envelope leaving no air pockets or space as they absorb oil.

  14. at last, apply maida paste around the corners and seal the edges. to prepare maida paste mix 1 tbsp of maida with 3 tbsp of water.

notes:

  • firstly, add any vegetables of your choice like capsicum, bean sprouts, mushrooms to make it more nutritious.
  • furthermore, make sure to roll tight without leaving space as they absorb oil and turns spring roll oily.
  • additionally, increase the amount of chilli sauce to make it spicy.
  • moreover, if you are doing in large quantity. to avoid spring roll sheets from drying out, place them between wet cloth. and also cover with wet cloth once you roll them.
  • finally, deep fry over medium flame to turn golden brown and crispy.
