i am not a huge fan of indian sweets. well, it’s not because of the taste, but because of the ingredients and the way it is prepared. in other words, i do not have any complaints about the taste but am overwhelmed with the calories it carries. this is my recent development and these days i prefer healthier with less or no sugar or with sugar alternatives like jaggery or dates. in this i have added a considerable amount of sugar yet, it is one of my personal favourites. it is loaded with dry fruits, which would basically help to provide the required energy and nutrients, especially after the tiring holi play. sugar also helps to provide glucose to your body and thus helping to regain energy. in addition to the holi, it has a good shelf life so that you can share it with friends and family even after holi season.
furthermore, some more additional tips, suggestions and variants to the Thandai Barfi Recipe. firstly, in this recipe, i have shown how to prepare a thandai mix powder first and then use it for barfi recipe. well, it may be an unnecessary step if you are preparing only barfi, but can be beneficial if you are planning thandai milk too. secondly, the thandai mix or even the drink is a mix of sweetness and spice as we are using pepper to prepare the mix. well, this combination is the core of this drink and sweet, but if you prefer to be less spicy, you may reduce it as per your taste bud. lastly, these barfis can easily last long for a couple of days if refrigerated. however, it is recommended to finish it as soon as possible due to fact that milk powder is used.

Ingredients
for thandai masala:
- ½ cup almond
- ¼ cup cashew
- 2 tbsp poppy seeds
- 2 tsp fennel
- 1 tsp cardamom
- ½ tbsp pepper
- 2 tbsp rose petals, dried
- few thread kesar / saffron
for thandai burfi:
- 3 cup milk powder
- 1 cup ghee
- 1¼ cup sugar
- ½ cup water
- nuts, for garnishing
for thandai milk:
- 2 cup milk
- 2 tsp sugar
Instructions
how to make instant thandai masala:
- firstly, in a pan dry roast ½ cup almond and ¼ cup cashew.
- roast until the nuts turn crunchy.
- now add 2 tbsp poppy seeds, 2 tsp fennel, 1 tsp cardamom, ½ tbsp pepper, and 2 tbsp rose petals.
- roast on low flame until the spices turn aromatic.
- cool completely, and transfer to the mixer jar.
- add few thread kesar and grind to a fine powder.
- finally, instant thandai masala is ready.
how to make thandai burfi:
- firstly, in a large bowl take 3 cup milk powder, 1 cup prepared instant thandai masala, and 1 cup ghee.
- mix well making sure everything is well combined.
- in a large kadai take 1¼ cup sugar and ½ cup water.
- stir well until the sugar dissolves completely.
- continue to boil till the 1 string consistency of sugar syrup is attained.
- now keeping the flame on low, add the mixture.
- keep stirring until the milk powder is well combined in sugar syrup.
- further, add 2 tbsp ghee and mix well.
- continue to cook on low flame until the mixture turns silky smooth consistency releasing ghee. you can also check by making a small ball and it is perfect if the mixture is non-sticky and holds shape.
- now transfer the mixture into the tray lined with baking paper.
- top with almonds, cashews, and press to level it up.
- rest for 2 hours or until it cools completely.
- now cut into pieces and ready to serve.
- finally, enjoy thandai burfi for a week when stored in the refrigerator.

- firstly, in a saucepan take 2 cup milk, 2 tbsp prepared instant thandai powder and 2 tsp sugar.
- stir well and boil the milk well. before serving, filter the milk.
- finally, thandai milk is ready to be enjoyed chilled or warm.

- firstly, sugar syrup consistency should be exact 1 string. if it is more then burfi will be hard. and if it is less then the burfi will be chewy and sticky.
- also, you can increase the amount of sugar if you are a sweet person. however, this is the perfect sweetness for these measurements.
- additionally, you can garnish with silver vark to look attractive.
- finally, thandai burfi recipe tastes great as it is flavored with rose petals.
