buttermilk recipe | spiced buttermilk recipe | chaas masala recipe with detailed photo and video recipe. basically a spiced and a healthy yoghurt or curd based drink which is typically served during the scorching summer heat to reduce the body temperature and to give a soothing effect. it is usually served after lunch or dinner as it helps with the digestion and lowering the spice heat.
most frequently i consume butter milk or chaas with just pinch of salt and hing after my meal. however my husband prepares this spicy, minty flavoured and seasoned buttermilk recipe once in while and i totally love it. he tries to mix and match with few ingredients but in this i have used a comprehensive list of ingredients for masala chaas or also pronounced as ‘chaach’ in hindi. moreover, he even tried to churn the homemade curd with a hand blender to prepare the authentic way of buttermilk, but he was unsuccessful. since then he gave up that idea and sticked to simply blending the curd.
furthermore, some important tips and suggestions for a perfect and flavoured spicy buttermilk recipe. firstly, in this recipe i have added lemon juice to introduce the sour taste and balance the spice level. ignore this completely, if your curd or dahi is sour in taste already. secondly, i have added seasoning of jeera seeds to introduce the smoky flavour to this beverage. however this is optional and can be completely ignored if you do not prefer so. lastly, i would heavily recommend to use the earthen pot to store the buttermilk as it helps to remain cool.

Ingredients
- 10 mint leaves / pudina
- 1 green chilli
- few coriander leaves
- 1 inch ginger / adrak
- 1 cup yogurt / curd, thick
- generous pinch asafoetida / hing
- salt to taste
- ¼ tsp cumin powder / jeera powder, roasted
- 1 tbsp lemon juice
- 1 cup water
- 10 ice cubes
for tempering:
- 1 tbsp ghee / clarified butter
- ½ tsp jeera / cumin
- few curry leaves / kadi patta
Instructions
- firstly, in a blender take mint leaves, coriander leaves, green chilli and ginger.
- also add 1 cup thick curd.
- additionally add generous pinch of hing, cumin powder and salt.
- also add lemon juice.
- furthermore, add 1 cup of water.
- and blend frothy.
- transfer the buttermilk to the large jug.
- add in ice cubes.
- meanwhile, prepare the tempering by heating up ghee.
- further add jeera and curry leaves.
- allow it to splutter and pour over chaas.
- mix well with a large spoon.
- finally, pour masala chaas or spiced buttermilk into glass or matka and serve chilled.
how to make spiced buttermilk with step by step photo:

notes:
- firstly, adjust the amount green chilli if you do not like spiciness.
- also if using sour curd skip the addition of lemon juice.
- additionally, adding tempering is optional, however adds more flavour to chaas.
- finally, serve masala chaas or spiced buttermilk chilled after a heavy meal.
