biryani masala recipe | how to make homemade biryani masala powder with detailed photo and video recipe. an exotic blend of indian spices for mouthwatering biryani rice including veg and non veg biryani rice recipe. certainly with this homemade ready mix spice powder, you would never go back to store bought biryani masala powder.
previously i use to prepare the veg biryani or hyderabadi dum biryani with store bought biryani masala powder. but i never use to get the restaurant style taste and flavour for my veg biryani. the main reason was my biryani masala powder and i always felt it was lacking with spice level and aroma. since then is started to prepare my own masala powder and i could easily control the spice level required in my biryani rice. not to forget about the preservatives and artificial colour added in the store bought spice powder. basically it is added to improve the shelf life and to make it more attractive. however, it would definitely compromise with the authenticity and spice level of spice powder.
furthermore, i would like to add few tips and suggestions for a perfect homemade biryani masala powder. firstly, i have used coriander seeds and dry red chilies in this recipe for the real taste. if you do not have or running short of it, you can use coriander powder and red chilly powder for this recipe. moreover you can also add pomegranate powder or anardana powder and mix it with biryani spice powder. basically it helps to tenderise the meat and is used specifically for meat biryani recipe. finally, store the spice powder in air tight container in a dry place for a longer shelf.

Ingredients
- 3 kashmiri red chilli, dried
- 7 bay leaf / tej patta
- 2 tbsp coriander seeds / dhaniya seeds
- 1 tbsp cumin / jeera
- 1 tbsp caraway seeds / kala jeera / shah jeera
- 3 mace / javitri
- 2 inch cinnamon stick / dalchini
- 1 nutmeg / jaayaphal
- 1 tsp cloves / lavang
- 3 black cardamom / badi elachi
- 3 star anise / chakkar phool
- 10 cardamom / elachi
- 1 tbsp pepper / kali mirch
- 1 tsp fennel / saunf
- ½ tsp turmeric / haldi
Instructions
- firstly, in a thick bottomed pan dry roast 3 red chilli and 7 bay leaf till they turn crisp. keep aside.
- further dry roast 2 tbsp coriander seeds, 1 tbsp cumin and 1 tbsp caraway seeds till they turn aromatic. keep aside.
- also dry roast 3 mace, 2 inch cinnamon stick, 1 nutmeg, 1 tsp cloves, 3 black cardamom, 3 star anise, 10 cardamom, 1 tbsp pepper and 1 tsp fennel / saunf.
- transfer to a blender and allow to cool completely.
- also add in ½ tsp turmeric.
- blend to fine powder and transfer to the airtight container.
- finally, store biryani masala powder in airtight container and use to prepare biryani.
how to make biryani masala with step by step photo:

notes:
- firstly, use fresh spices else the masala will not last long.
- also make sure to dry roast on low flame to avoid burning of spices.
- alternatively, keep the spices in hot sunlight instead of dry roasting.
- finally, homemade biryani masala powder stays good for 3 months when stored in airtight container.
