udupi saaru pudi | rasam powder | saarina pudi recipe with step by step photo recipe. rasam is one of the recipe which is prepared in every south indian house. but i think most of them would buy rasama powder or saaru powder in a grocery store. the main reason i think is most of the people assume that preparing rasam powder or saaru powder is cumbersome process.

however, it is not. trust me. preparing rasam powder or saaru pudi is easy process. you can easily prepare this recipe with the ingredients available in our houses. nothing special artificial colour required for this. add some byadigi red chillies would do the trick. these dry red chillies would enhance this spice mix and gives a nice aroma.

annually in my hometown we offer pooja to lord ganesha and in that occasion we normally have a feast to all our community members and relatives. rasam is must recipe in such feasts and ussually the preparation part is outsourced to the experienced chefs. on such occasions, rasam powder is prepared on the same occasions and served. i learnt this rasam recipe with one such chefs.

Ingredients (1 cup = 250 ML)
  • 1 cup coriander seeds
  • ¼ cup cumin seeds
  • 1 tbsp fenugreek seeds / menthe
  • 30 red chilli - byadigi or kashmiri chillies
  • ½ tbsp asafoetida / hing
  • 5-6 curry leaves
  • 3 tsp coconut oil / any oil
Instructions
  1. in a deep frying pan add 1 -2 tsp of oil and fry coriander seeds, cumin seeds fenugreek seeds separately and keep aside. fry till they become golden brown and you start getting the aroma. do not burn it.
  2. in the same frying pan, add 1 tsp of oil and add red chillies. fry them till golden brown. keep aside once done.
  3. now to the same pan add curry leaves and fry them. do not burn them.
  4. bring all the ingredients to room temperature and add them to mixer grinder. also add hing to the same blender. grind them to a smooth powder.
  5. bring the grounded masala to room temperature.
  6. use as required to make rasam recipe.

notes:

  • avoid moisture while preparing the rasam powder. this would give a longer shelf life.
  • store the rasam powder in air tight container.
  • roast all the ingredients separately.
  • if you like spicy rasam, add more chillies.

    My native place is udupi and i was brought up Kerala.I have tried this saaru pudi twice in over 3 months and i must say it turned out to be awesome!the minute i had the saaru, i was transported back to my childhood days where my mom would get this saaru pudi from udupi and make it for us.we used to be so sad when this powder got over, which meant we had to wait another year to go to udupi and get this powder from the stores.now living abroad i always missed this saaru and had been trying to replicate the saaru pudi for years from various blogs.all those recipes doesnt even come close to your awesome saaru pudi.i have even sent the recipe link to my mom in India and made her promise to try this out.i am sure once she makes this she too wouldnt have to wait every year to go to udupi and get the saaru pudi.when my inlaws came to visit us abroad i made the saaru with this powder.My mother inlaw asked me where i got this authentic saaru pudi in US.she couldnt believe that i made it at home.Thank you soo much for sharing this recipe with us.Words cant explain how grateful i am.
