paneer kolhapuri recipe | how to make spicy paneer kolhapuri gravy with detailed photo and video recipe. basically a spicy dish from maharastrian or specifically from kolhapur region prepared with paneer and dry kolhapur masala. the masala is mixture of dry spices with red chillies and dry coconut and can be used to prepare any gravy based curries.
i have shared the authentic veg kolhapuri or vegetable kolhapuri gravy recipe, and i have used the same spice mix for this recipe. also in this recipe i have used only paneer cubes which can be easily extended by adding vegetables. so basically it can be mix veg paneer kolhapuri recipe by combining 2 recipes. further i always prepare the kolhapuri spice mix masala well ahead in advance and i use it in most of my curries. i personally love it when added to paneer bhurji gravy, paneer kadai and even bhindi masala recipe.
furthermore some important tips and recommendations for a perfect paneer kolhapuri gravy recipe. in this recipe i have prepared the spice mix just for this recipe, but if you are preparing at bulk then dry roast the spices separately. secondly, i sautéed the onion and tomato which i later mashed to thick paste. however you can use tomato puree or even the ground the sautéed onion and tomato paste. lastly, this recipe can be extended by adding vegetables like broccoli, potatoes, carrots and even peas.

paneer kolhapuri recipe | how to make spicy paneer kolhapuri gravy
Ingredients
for kolhapuri masala:
- 1 tsp sesame seeds / til
- 1 tsp poppy seeds / khus khus
- ½ tsp cumin / jeera
- 1 tsp coriander seeds
- 3 cloves / lavang
- 1 inch cinnamon / dalchini
- 2 cardamom / elachi
- ¼ tsp balck pepper / kali mirch
- 1 star anise / chakr phool
- 3 dried kashmiri red chilli
- 2 tbsp coconut, dry / desiccated
other ingredients:
- 3 tbsp oil
- 9 cubes paneer / cottage cheese
- 1 bay leaf / tej patta
- 1 onion, finely chopped
- 3 to mato, finely chopped
- 1 tsp ginger garlic paste
- 1 tsp salt
- ¼ tsp turmeric / haldi
- 1 cup water
- 1 tsp kasuri methi / dry fenugreek leaves, crushed
Instructions
- firstly, in a pan dry roast all the spices listed for masala on low flame for 2 minutes.
- blend to fine powder and kolhapuri masala is ready. keep aside.
- heat 3 tbsp oil and fry 9 cubes paneer. keep aside.
- in the same oil add in 1 bay leaf, onion, ginger garlic paste and saute well.
- furthermore add 3 tomato and cook well.
- mash the tomatoes well with the help of potato masher.
- add in prepared kolhapuri masala, ¼ tsp turmeric and 1 tsp salt.
- saute on low flame till oil separates from masala.
- now add 1 cup water and mix well adjusting consistency.
- add in fried paneer.
- cover and simmer for 5 minutes.
- now add 1 tsp crushed kasuri methi and mix well.
- finally serve paneer kolhapuri masala with tandoori roti or garlic naan.
how to make paneer kolhapuri with step by step photo:
- firstly, in a pan dry roast all the spices listed for masala on low flame for 2 minutes.
- blend to fine powder and kolhapuri masala is ready. keep aside.
- prepare the curry by heating 3 tbsp oil and fry 9 cubes paneer.
- fry the paneer cubes to golden brown and keep aside.
- in the same oil add in 1 bay leaf and saute till it turns aromatic.
- further add 1 onion and saute well.
- also add 1 tsp ginger garlic paste and saute well.
- furthermore add 3 tomato and saute for 2 minutes.
- cover and simmer for 10 minutes or untill tomatoes get cooked well.
- mash the tomatoes well with the help of potato masher.
- add in prepared kolhapuri masala (approx 3 tbsp). adjust the masala based on spice level.
- also add ¼ tsp turmeric and 1 tsp salt.
- saute on low flame till oil separates from masala.
- now add 1 cup water and mix well adjusting consistency.
- add in fried paneer.
- cover and simmer for 5 minutes or until paneer absorbs spices.
- now add 1 tsp crushed kasuri methi and mix well.
- finally serve paneer kolhapuri masala with tandoori roti or garlic naan.
notes:
- firstly, paneer kolhapuri turns to be more spicy and tasty. however, adjust the spice level according to your preference.
- furthermore, prepare the kolhapuri masala in large quantity and use as required. make sure to use dry coconut if preparing in a large quantity.
- also add any vegetables of your choice like beans, gobi, aloo for variation.
- finally, paneer kolhapuri can also be topped with fresh cream for more rich flavour.
