my previous post on panna cotta recipe was mango flavoured panna cotta which i had released last year during the mango season. this year i wanted to share something unique for the valentine. and fortunately it is strawberry season too now and hence without any hesitation, i decided to prepare strawberry panna cotta recipe. the layering and the white cream part is very much inspired by my previous mango version and in this, i have used strawberry pulp instead of mango. i personally felt strawberry panna cotta dessert is more creamy and tasty when compared to other flavours because of the sweet and sour taste of ripe strawberries. but this is completely my individual preference and all panna cotta recipes are equally good.
furthermore some important tips, suggestions and serving ideas for strawberry panna cotta recipe. firstly, i have used agar agar for the thickness and stiffness but typically gelatin is used and more preferred. my only concern with gelatin is the way it is prepared and contains traces of skin and bones from cattle and pigs. secondly, the layering of white cream and strawberry pulp can be done in any shape and pattern. if you cannot follow the pattern i have shown in this recipe, you can pour the strawberry sauce on top of white creamy panna cotta and have the horizontal layering. finally, you can also prepare the panna cotta by mixing the strawberry sauce directly into the thickened cream and set it without any layer between them.

Ingredients
for milk mixture:
- 1 cup milk
- ¾ cup cream
- 1 tsp agar agar / gelatin
- ½ cup powdered sugar
- 1 tsp vanilla extract
- pinch of salt
for strawberry mixture:
- 2 tbsp water, warm
- 1 tsp agar agar / gelatin
- 2 cup strawberry
Instructions
- firstly, prepare milk mixture by heating 1 cup milk and ¾ cup cream.
- whisk and mix well making sure the cream combines well with milk.
- now add 1 tsp agar agar and whisk well.
- cook the milk on medium-low heat till it steams (do not boil).
- further, add ½ cup powdered sugar and dissolve sugar.
- turn off the flame and add 1 tsp vanilla extract and a pinch of salt.
- whisk and mix well. let the milk cool for 10 minutes before pouring to the glass.
- furthermore, place the serving glass in a bowl so that it gets tilted slightly.
- pour in prepared milk mixture till it reaches the rim.
- now refrigerate it for 2 hours or overnight, till it sets completely.
- after 2 hours, make sure to check the milk mixture has set completely.
- now prepare strawberry mixture 1 tsp of agar-agar/gelatin in 2 tbsp warm water.
- mix well and dissolve agar-agar completely.
- further, add 2 cups of strawberry puree.
- mix well making sure the pulp gets mixed up with agar-agar uniformly.
- pour the strawberry mixture into the glass.
- refrigerate it for 2 hours or overnight, till it sets completely.
- finally, enjoy strawberry panna cotta or strawberry pudding chilled.

notes:
- firstly, set the milk layer completely before pouring strawberry mixture, else the milk layer will fall apart.
- also, do not boil the milk, just heat till it steams up, else milk might curdle.
- also, stir the milk continuously else agar-agar will settle at bottom and burns.
- furthermore, if using gelatin (not suitable for vegetarian), make sure its neutral flavoured.
- finally, strawberry panna cotta or strawberry pudding can be made to mango panna cotta by replacing strawberry with mangoes.
