beetroot rice recipe | beetroot pulao | how to make beetroot rice with detailed photo and video recipe. an simple and healthy rice or pulao recipe made with beetroot vegetable and dry spices. the rice has to offer a combination of taste with sweetness from beetroot and hot flavour from dry spices. it can be an ideal one-pot lunch box recipe and can be prepared well ahead in advance and can be served with choice of raita.
i have posted several rice recipes till now, but beetroot rice recipe is the most attractive and flavoured recipe out of all. perhaps it is because of the bright and attractive colour the beetroot vegetable applies to the rice. in addition, the combination of sweet and savoury spice cannot be matched by any other rice recipe. generally, pulao recipe is savoury to spice in the taste. and some may have to offer the rich and creamy flavour due to the addition of coconut cream or milk to it. but in this recipe, the sweetness is completely organic due to the beetroot vegetable and not by adding any sugar. i personally like this recipe as it is a one-pot meal and an ideal recipe for a lunch box, but can be served with any choice of dal recipes.
the beetroot rice recipe is quite simple to prepare, yet some tips and suggestion to make it perfect. firstly, i have added cubed and grated beetroot while cooking the rice to make it colourful. additionally, you can add roughly chopped beetroot along with beetroot puree for a better experience. secondly, you can experiment the recipe by adding other veggies like potatoes, carrot and beans. i personally would recommend this as the other veggies would overpower the beetroot flavour. finally, i would heavily recommend preparing this recipe with basmati rice or long grain rice. alternatively, you can also use sona masuri but may have to be careful so that it does not turn mushy.

Ingredients
- 1 tbsp ghee / clarified butter
- 1 tsp cumin / jeera
- 1 bay leaf / tej patta
- 4 cloves
- 2 pods cardamom
- 1 inch cinnamon
- ½ onion, slice
- 3 chilli, slit
- 1 tsp ginger garlic paste
- ½ tomato, finely chopped
- 1 cup beetroot, chopped
- 2 tbsp beetroot, grated
- ¼ tsp turmeric
- ¼ tsp garam masala
- 1 tsp salt
- 2 tbsp mint / pudina, finely chopped
- 1 cup basmati, soaked 20 minutes
- 2 cup water
- 1 tsp lemon juice
- 2 tbsp coriander, finely chopped
Instructions
- firstly, in a large kadai heat 1 tbsp ghee and saute 1 tsp cumin, 1 bay leaf, 4 cloves, 2 pods cardamom and 1 inch cinnamon.
- now add ½ onion, 3 chilli and 1 tsp ginger garlic paste. saute well.
- further, add ½ tomato and saute until tomatoes turn soft and mushy.
- additionally, 1 cup chopped beetroot and 2 tbsp grated beetroot. saute for 2 minutes.
- add in ¼ tsp turmeric, ¼ tsp garam masala, 1 tsp salt and 2 tbsp mint. saute until the spices turn aromatic.
- now add 1 cup basmati rice, 2 cup water and mix well.
- cover and simmer for 20 minutes or till the rice get cooked completely.
- now add 2 tbsp coriander and mix well.
- finally, beetroot rice is ready to serve with raita or kachumber.
how to make beetroot pulao with step by step photo:

- additionally, 1 cup chopped beetroot and 2 tbsp grated beetroot. saute for 2 minutes.
- add in ¼ tsp turmeric, ¼ tsp garam masala, 1 tsp salt and 2 tbsp mint. saute until the spices turn aromatic.
- now add 1 cup basmati rice. make sure to rinse well and soak rice for 20 minutes.
- saute for 1 minute without breaking rice.
- further, pour 2 cup water, 1 tsp lemon juice and mix well.
- cover and simmer for 20 minutes or till the rice get cooked completely.
- mix gently without breaking rice.
- now add 2 tbsp coriander and mix well.
- finally, beetroot rice is ready to serve with raita or kachumber.
notes:
- firstly, add vegetables of your choice along with beetroot to make it more nutritious.
- also, increase the amount of green chilli to make it spicy.
- furthermore, beetroot rice can be pressure cooked for 2 whistles if you do not prefer simmering.
- finally, beetroot rice recipe tastes great when prepared with basmati rice.
