Tomato Rice Recipe | Instant Tomato Rice with Premix Paste | Thakali Rice with detailed photo and video recipe. Healthy and flavoured rice recipe prepared mainly with basmati rice and spiced tomato masala. It is an ideal one-pot meal or lunch box recipe which can also be served for breakfast and dinner. Generally, it is served without any side dish but tastes amazing when served with a choice of sour raita.

South Indian cuisine deals with many flavoured rice recipes which are primarily prepared from leftover rice. The traditional pulao recipes are cooked from the scratch with rice, veggies and spices mixed and cooked together. But quick and instant rice recipes like tomato rice are prepared with cooked rice and prepared within minutes.

the recipe for preparing tomato rice or any vegetable-flavoured rice is pretty simple. in this recipe, I have used onions and vegetables mixed with other spices to prepare mushy tomato masala. Later it is simply mixed with pre-cooked rice and sautéed till it becomes dry and not sticky. Further, I have even added mint leaves which add up flavour to the rice, but it is completely optional. I even extend this recipe by preparing a thick paste of coriander, green chillies and pudina leaves and adding it to tomato masala. In addition, you can add other dry veggies like green peas, finely chopped potatoes, mushrooms and gobi to prepare vegetable-based tomato rice.

Instant Tomato Rice with Premix Paste

Furthermore, some considerations and tips while preparing an easy tomato rice recipe. Firstly, I would heavily recommend using ripe and sour tomatoes, preferably Roma tomatoes for the best result. Alternatively, you can also use store-bought tomato purée to hasten the cooking procedures. Secondly, in this, I used pre-cooked and dry rice and mixed it with the tomato masala paste. But alternatively, you can also cook tomato rice in the cooker. Basically, you should be good by following the 1:2 ratio of rice to water. Lastly, the thakali rice can be prepared with either basmati rice or sona masuri rice. In this post, I have used basmati but it should taste equally great with sona masuri.

Ingredients
  

  • water, for boiling
  • 8 tomato
  • 10 dried red chilli
  • ¼ cup oil
  • 2 tbsp ghee
  • 1 tsp mustard
  • 1 tsp cumin
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 1 bay leaf
  • 3 pods cardamom
  • 1 inch cinnamon
  • 1 star anise
  • ½ tsp hing
  • 1 inch ginger, grated
  • 4 cloves garlic, finely chopped
  • 1 chilli, chopped
  • 3 tbsp cashew
  • ½ onion, sliced
  • ½ tsp turmeric
  • 1 tsp coriander powder
  • 2 tsp salt
  • 2 tbsp mint, chopped
  • 2 tbsp coriander, chopped
  • 1 tomato, chopped

Instructions
 

  • firstly, in boiling water add 8 tomato and 10 dried red chilli.
  • boil for 5 minutes, or until the tomato softens and the skin separates.
  • cool completely, and grind to a smooth puree. keep aside.
  • in a large pan heat ¼ cup oil and 2 tbsp ghee.
  • add 1 tsp mustard, 1 tsp cumin, 1 tsp urad dal, 1 tsp chana dal, 1 bay leaf, 3 pods cardamom, 1 inch cinnamon, 1 star anise and ½ tsp hing.
  • also add 1 inch ginger, 4 cloves garlic, 1 chilli and 3 tbsp cashew.
  • saute until the cashew turns golden brown.
  • now add ½ onion and saute until the onions soften slightly.
  • keeping the flame on low, add ½ tsp turmeric, 1 tsp coriander powder and 1 tsp salt.
  • saute until the spices turn aromatic.
  • further add 2 tbsp mint, 2 tbsp coriander and saute well.
  • add in prepared tomato puree and cook well.
  • also add 1 tomato, 1 tsp salt and mix well.
  • cover and cook for 5 minutes or until the oil separates from the sides.
  • tomato rice mix is ready, cool completely and store in a glass jar refrigerated upto a month.
  • to prepare tomato rice, in a large bowl take 4 cup boiled rice and add 2 tbsp instant tomato rice paste. mix well.
  • finally, enjoy tomato rice with raita and papad.

Notes:

  • firstly, make sure the tomato has to be well ripened, else the rice will not taste great.
  • also, i have used dried red chilli for spiciness. you can replace it with chilli powder.
  • additionally, if the tomatoes are not sour, then you can add tamarind extract along with the tomatoes.
  • finally, tomato rice paste can be also carried on the journey as it stays good for a longer time.
