There has always been a heated argument about the existence of Veg Biriyani and often termed a pulao recipe. However, I firmly believe that both recipes are unique and separate with a different set of ingredients used it. Yet there can be a recipe which can be combined together with the spices and ingredients used to make a combo recipe known as the biriyani pulao recipe.

Well, we have established that the biriyani and pulao recipes are distinct recipes, now let’s discuss the actual differences. Firstly, the biriyani recipe is a flavoured aromatic rice recipe made with basmati rice or long grain rice. Typically the rice and the curry base are prepared separately which is later combined by layering and followed by baking in a pot known as dum cooking. In other words, the recipe is spice rich and known for its rich aroma and combination of flavours. Whereas the pulao recipe is a simple, less complicated and lighter rice recipe. Moreover, the rice, whole spices and mixed herbs are cooked together in a pot or pressure cooker till all the vegetables or rice is cooked. Also, in pulao, there isn’t any layering and dum-styled cooking and hence it takes only a few mins to prepare this recipe. In short, the pulao rice is less spiced and the rice is infused with spice and herb flavours. This recipe of biriyani pulao contains both positives and hence should be liked by everyone.

Secondly, even though this recipe is termed biriyani, it does not have the dum cooking and layering like a traditional recipe. However, the recipe is cooked like a pulao with all the biriyani ingredients mixed together and pressure cooked in a cooker. Also, I would recommend cooking the rice on a low to medium flame for even cooking. Ingredients
  

  • 1½ cup basmati rice
  • 2 tbsp ghee
  • 2 tbsp oil
  • 1 tsp cumin
  • 1 bay leaf
  • ½ tsp pepper
  • ½ tsp cloves
  • 1 inch cinnamon
  • 1 javitri
  • 2 onion, sliced
  • 1 ginger garlic paste
  • 1 chilli, chopped
  • 1 carrot, chopped
  • 1 potato, cubed
  • 5 beans, chopped
  • 3 tbsp peas
  • ½ capsicum, cubed
  • 1 tomato, chopped
  • ¾ cup curd
  • ½ tsp turmeric
  • 1 tsp chilli powder
  • 2 tsp biryani masala
  • 1 tsp salt
  • 2 tbsp coriander, chopped
  • 2 tbsp mint, chopped
  • 2½ cup water

Instructions
 

  • firstly, soak 1½ cup basmati rice for 20 minutes.
  • in a pressure cooker, heat 2 tbsp ghee and 2 tbsp oil.
  • add 1 tsp cumin, 1 bay leaf, ½ tsp pepper, ½ tsp cloves, 1 inch cinnamon and 1 javitri.
  • saute until the spices turn aromatic.
  • further add 2 onion, 1 ginger garlic paste and 1 chilli.
  • saute until the onions turn golden brown.
  • also add 1 carrot, 1 potato, 5 beans, 3 tbsp peas, ½ capsicum and 1 tomato.
  • saute for 2 minutes or until the vegetables shrink slightly.
  • keeping the flame on low add ¾ cup curd and mix well.
  • add ½ tsp turmeric, 1 tsp chilli powder, 2 tsp biryani masala, 1 tsp salt, 2 tbsp coriander and 2 tbsp mint.
  • saute on low flame until the spices turn aromatic.
  • further, add 2½ cup water and get to a boil.
  • drain off the rice and add to the cooker.
  • mix gently without breaking the rice.
  • cover and pressure cook for 2 whistles.
  • once the pressure is releases, fluff the rice gently without breaking the rice.
  • finally, enjoy biryani pulao recipe with raita, garnished with coriander leaves.

Commonly biryani recipe can be spicy, as it is made with combination of whole spices. You may feel the spice heat of other spices and not just limited red chilli powder or pepper. Whereas pulao can be simply a flavoured rice with mild spice heat in it.
