cheese dosa recipe | cheese masala dosa recipe with red chutney with detailed photo and video recipe. basically a fusion of recipes between of traditional south indian dosa recipe with perhaps any cheese street food. it is a popular fast food and served as a street food in major cities of india as snack with combination of sambar, chutney recipes.
i have used the normal dosa batter for this recipe and i have already shared it in a separate post with video. also i have used a cast iron tawa to prepare the dosa which yields a crisp and golden coloured dosa. if you are using a non stick pan, you may not have the same quality and a crisp dosa. but certainly you can follow the same procedure with it too and there would not be any difference with the taste. further apply generous butter on top of dosa which would certainly help to give best crispy cheese dosa.
in addition, i personally feel the red chutney adds spicy taste and i would heavily recommend applying it on top of dosa. many street vendors skip this part and only served with aloo bhaji and cheese. if you are running short of time you may skip and top it only with cheese. also the other hand tip is to mix both red chutney and butter and then start applying it to cheese dosa. basically it helps to spread chutney easily and also saves time and eventually less roasting. lastly, serve these dosa’s immediately when the cheese starts to melt. otherwise, you feel the dosa rubbery once the cheese starts getting harder.

Ingredients
for red chutney:
- 2 tsp oil
- 2 tbsp chana dal
- 4 cloves garlic
- 1 inch ginger
- 1 onion, finely chopped
- 3 whole kashmiri red chilli, dried
- ¼ tsp turmeric / haldi
- salt to taste
for aloo bhaji:
- 2 tsp oil
- ½ tsp mustard seeds
- ½ tsp jeera / cumin
- pinch of hing / asafoetida
- ¾ tsp urad dal
- ¾ tsp chana dal
- few curry leaves
- ½ onion, finely chopped
- 1 inch ginger, finely chopped
- 1 green chilli, finely chopped
- ½ tsp turmeric / haldi
- salt to taste
- 2 potato, boiled & peeled
- ¼ cup water, adjust consistency
- 2 tbsp coriander leaves, finely chopped
- 1 tbsp lemon juice
other ingredients:
- 2 cups dosa batter
- 4 tsp butter
- ½ cup cheese, cheddar or mozzarella
Instructions
- firstly, heat the griddle and pour a ladleful of the dosa batter on it and spread it in a circular motion thin circle.
- once the dosa dries out from top, add a dollop of butter.
- also add prepared red chutney, adjust the chutney according to the spice level you are looking for.
- and mix red chutney and butter together.
- furthermore, mix and spread all over the dosa.
- also spread 1 tbsp of prepared aloo bhaji over dosa.
- additionally, grate cheese generously.
- cook till the bottom of dosa turns golden brown.
- then roll the dosa along with cheese - bhaji and cut half.
- finally, cut half cheese dosa and serve immediately with chutney.
how to make cheese dosa with step by step photo:
red chutney recipe:
- firstly, heat a pan with some oil.
- further saute 2 tbsp chana dal to light golden brown.
- add in 4 cloves garlic, 1 inch ginger and 1 onion.
- saute well till the onions turn translucent.
- additionally add in 3 whole dried red chilli, ¼ tsp turmeric and salt to taste.
- saute well till the chillis turn crisp.
- cool the mixture completely, and transfer to the blender.
- finally, blend to smooth paste adding water as required. keep aside.
aloo bhaji recipe:
- firstly, in a large kadai heat oil.
- further add ½ tsp mustard seeds, ½ tsp jeera, ¾ tsp urad dal, ¾ tsp chana dal, pinch of hing and few curry leaves.
- allow to splutter.
- additionally add in ½ onion, 1 inch ginger and 1 green chilli. saute well.
- also add in ½ tsp turmeric and salt to taste. saute well.
- now add 2 boiled and mashed potatoes. mix well.
- add in water as required and adjust consistency.
- also add coriander leaves and lemon juice.
- finally, mix well and aloo bhaji is ready. keep aside.
cheese dosa recipe:
- firstly, heat the griddle. smear some oil over the tawa and wipe off with a tissue paper. (do not add oil if using non-stick pan)
- furthermore, sprinkle some water and wipe off with wet cloth or tissue.
- and pour a ladleful of the dosa batter on it and spread it in a circular motion thin circle.
- once the dosa dries out from top, add a dollop of butter.
- also add prepared red chutney, adjust the chutney according to the spice level you are looking for.
- and mix red chutney and butter together and spread all over the dosa.
- also spread 1 tbsp of prepared aloo bhaji over dosa.
- additionally, grate cheese generously.
- cook till the bottom of dosa turns golden brown. then roll the dosa along with cheese – bhaji and cut half.
- finally, cut half cheese dosa and serve immediately with chutney.
notes:
- firstly, adjust the amount of red chutney depending on spice level.
- additionally, add generous amount of butter while preparing dosa to get rich golden colour and crispy texture to dosa.
- also, skip aloo bhaji if you are not preparing aloo cheese masala dosa.
- finally, cheese dosa or cheese masala dosa taste great when prepared it spicy and served hot.

In case you did not know already, mozzarella and most commercial cheese are not vegetarian. They are produced by using an enzyme called rennet that is extracted from dried intestine of cow/calf. Only paneer as produced in India is a vegetarian cheese.
I knew about Parmesan cheese but Mozarella cheese was a knew one to me
