dhaba style dal tadka recipe | dal fry tadka dhaba style recipe with detailed photo and video recipe. basically an equal proportion of toor dal and channa dal cooked together and tempered with hot ghee and spices. it is typically consumed with jeera rice or normal hot steamed rice, however it can also be served with roti and chapathi’s.
any dal recipes or variation of dal recipes are very simple to prepare and it begins with pressure cooking it as a standard procedure. a simple dal can be cooked entirely in pressure cooker by frying the onion and tomato which is later pressure cooked with choice of lentils. it is thrifty and economical and more importantly hastens the entire procedure. however a dal fry tadka dhaba style recipe is slightly different and is a 3 step process. firstly the toor dal and channa dal is pressure cooked separately. later the finely chopped onions and tomatoes is sautéed with spices till it forms as a paste to which the cooked dal is added. finally ghee tempering is added to dhaba style dal tadka with red chilli powder, garlic and whole red chilies.
while there isn’t much complication with dhaba style dal tadka recipe, yet i would highlight few tips and suggestions. firstly, i have taken 1:1 ratio for toor dal vs channa dal. it can also be prepared with 2:1 ratio of channa dal and toor dal. secondly, do not mash the pressured cooked dal completely. it tastes good when served with some unmashed dal which also gives a nice texture to it. lastly, dal fry tadka should always be served hot otherwise it would solidify. you can also reheat by adding some water to bring it to a right consistency.

Ingredients
for pressure cooking:
- ½ cup toor dal, washed
- ½ cup chana dal, washed
- 3 cups water
- 1 tsp oil
- ½ tsp turmeric / haldi
for dal preparation:
- 1 bay leaf / tej patta
- 1 inch cinnamon stick / dalchini
- 2 tbsp ghee / clarified butter
- 1 tsp jeera / cumin seeds
- 1 onion, finely chopped
- 2 to matoes, finely chopped
- 1 tsp ginger-garlic paste
- ½ tsp turmeric / haldi
- 1 tsp kashmiri red chilli powder / lal mirch powder
- ½ tsp coriander powder
- ½ tsp garam masala
- salt to taste
- ½ tsp aamchur powder / dry mango powder
for tadka / tempering:
- 1 tbsp ghee / clarified butter
- 2 clove garlic, finely chopped
- pinch of hing / asafoetida
- 2 dried red chilli
- ½ tsp kashmiri red chilli powder / lal mirch powder
Instructions
- firstly, pressure cook dal for 5 whistles.
- in a kadai heat ghee and add spices.
- furthermore, add in chopped onions and ginger-garlic paste. saute well.
- also add in chopped tomatoes and saute well.
- now add spice powder and salt.
- add in pressure cooked dal and mix well.
- simmer for 6 minutes and pour the tempering / tadka over dal.
- finally, mix the dhaba style dal tadka well and serve with hot steamed rice or roti.
how to make dhaba style dal tadka with step by step photo:
- firstly, in a pressure cooker add in ½ cup toor dal, ½ cup chana dal, 3 cups water, 1 tsp oil and ½ tsp turmeric.
- pressure cook for 5 whistles on medium flame or till dal gets cooked well.
- now in a large kadai heat 2 tbsp of ghee.
- add in 1 bay leaf, 1 inch cinnamon stick and 1 tsp jeera. saute till spices turn aromatic.
- furthermore, add in 1 finely chopped onions and saute well.
- additionally add in 1 tsp ginger-garlic paste and saute.
- also add in 2 finely chopped tomatoes and saute till it turns soft and mushy.
- now add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp coriander powder, ½ tsp garam masala, ½ tsp aamchur powder and salt to taste.
- saute on low flame till spices gets cooked well completely.
- now add in pressure cooked dal and mix well.
- add water if required and adjust the consistency.
- simmer for 6 minutes or till dal absorbs spices.
- now prepare the tempering or tadka by heating 1 tbsp ghee.
- saute 2 clove garlic for a minute.
- also add in pinch of hing, 2 dried red chilli.
- turn off the stove and add ½ tsp red chilli powder.
- mix well and pour the tempering / tadka over dal.
- finally, mix the dhaba style dal tadka well and serve with hot steamed rice or roti.
notes:
- firstly, use ghee to prepare dal tadka for more dhaba flavours.
- also adding a tsp of oil while pressure cooking dal helps to cook dal easily.
- additionally, add in green chilli for more spicy flavours.
- finally, adjust the consistency of dhaba style dal tadka to your preference.
