panchmel dal recipe | pancharatna dal recipe with step by step photo and video recipe. basically, pancharatna dal is a curry prepared from 5 lentils with spices. dal recipes are very common in india, and it is consumed with either rice or rotis. panchamel dal is also a type of dal coming directly from rajasthani cuisine. it is very simple, tasty and yet highly nutrient dal recipe.
my first encounter to panchamel dal recipe was during an my family outing to jaipur. during our visit to jaipur, we took the opportunity to taste the local delicacies and i encountered this dal recipe. soon without any delay, i noted down the recipe and i had decided to prepare it. even with my first try, i was so happy with the outcome. perhaps because it so simple to prepare it.
i am huge fan of dal recipes and i prepare almost every day dal recipes in my house. being vegetarian, we completley rely on dal recipes for proteins in our diet. i would not hesitate to term panchamel dal as one of good source of proteins. i have used the following dal for this recipe.
- moong dal – split green gram
- masoor dal – split red lentils
- toor dal – arhar dal, tuvar, tur dal, pigeon peas spilt and skinned
- chana dal – split bengal gram
- black urad dal – split black gram/ black lentils

Ingredients
dal's used :
- moong dal - 2 tbsp
- masoor dal - 2 tbsp
- toor dal - 2 tbsp
- chana dal - 2 tbsp
- black urad dal - 2 tbsp
for masala:
- 1 medium sized onion (finely chopped)
- 1 medium sized tomato (finely chopped)
- 2-3 dry red chilies
- 10-12 curry leaves / kadi patta
- 2 tsp ginger - garlic paste
- ½ tsp black mustard seeds/rai
- 1 tsp cumin seeds / jeera
- 1 to 2 pinches of asafoetida powder / hing (optional)
- ½ tsp turmeric powder / haldi
- ½ - 1 tsp red chili powder / lal mirch powder
- 1 tsp coriander powder (optional)
- 1 tsp kasuri methi / dry fenugreek leaves
- ½ tsp garam masala powder
- 2-3 tbsp oil or ghee or unsalted butter
- 1 or 2 tbsp chopped coriander leaves / dhania patta
- salt as required
Instructions
- combine all the 5 dals in equal proportion and soak in water for 30-45 mins.
- pressure cook the dals adding 3 cups of water for 4-5 whistles.
- in a pan heat ghee and add the mustard, cumin and fry them. let them splutter.
- add the onions and fry till they become transparent or light brown.
- now add ginger - garlic paste and fry until the raw smell disappears.
- add red chillies, curry leaves and stir.
- now it is time to add the tomatoes. cook till they soften and you see oil releasing from the sides.
- add all the spice powders - turmeric powder, red chili powder, coriander powder. and fry for a minute.
- now add the cooked and mashed dal. stir well.
- add water and salt to taste.
- continue to stir and cook the the dal for 4-5 minutes in a low to medium flame.
- finally, add the crushed kasoori methi and garam masala.
- add chopped coriander leaves.
- your panchamel dal is ready. serve with choice of rotis or rice recipes.

notes:
- always serve panchamel dal warm or hot. in addition, top with ghee.
- you can add 1-2 tsp of ghee while serving it with rice.
- do not skip the soaking process, or otherwise the lentils may not be cooked properly.

yes you can use oil instead of ghee
Enter your Kitchen store/ shelf where the dals are kept. Take 1 tbsp of all the dals and soak overnight. Follow the rest of the steps.
