i have already prepared the traditional way of preparing cumin rice recipe. however, this is a easier version of jeera pulao with leftover rice. having said that, freshly cooked rice can also be used for this recipe. however, it has to be cooled down and dried before using it. in other words, very similar to the way fried rice is prepared, where cooked rice is tossed with other ingredients. i personally follow this way of preparing jeera rice compared to the traditional way. perhaps, it quicker, more crisp and lastly more tasty because of oil/ghee.

furthermore, some variations and tips for perfect jeera pulao recipe. firstly, i have added onions and whole spices to oil  before adding cooked rice. onions and spices can be totally skipped and jeera rice can be prepared with just cumin seeds and salt. secondly, even green peas can be added while sautéing onion. but it would be very similar to matar pulao and i would like to keep my cumin rice simple. lastly, fry onions and spices in ghee to get the extra rich flavour rather than vegetable oil.

Ingredients (1 cup = 250 ML)
  • 1 tbsp ghee / clarified butter
  • 1 tsp cumin seeds / jeera
  • 3 cardamom / elachi
  • 7 cloves / lavang
  • 1 bay leaf / tej patta
  • 1 inch cinnamon stick / dalchini
  • ½ medium sized onion thinly sliced
  • 2 cups cooked rice basmati
  • salt to taste
Instructions
  1. firstly, in a large kadai heat a tablespoon of ghee. you can also use oil.
  2. further, add cumin seeds and allow to splutter.
  3. also saute cardamom, cloves, bay leaf and cinnamon stick. saute on low flame till they turn aromatic.
  4. further, add thinly sliced onion and saute well.
  5. later add 2 cups of cooked rice / leftover rice. for best results, add a tsp of oil while cooking basmati rice to avoid rice grains from sticking to each other.
  6. furthermore add salt to taste and mix gently.
  7. mix gently making sure the rice grains doesn't break.
  8. simmer for 3 minutes till the rice grains turn hot.
  9. finally, jeera rice is ready to serve with curries or dal.

notes:

  • firstly, use completely cooled rice to avoid rice grains from sticking to each other.
  • also add finely chopped garlic for more flavours.
  • additionally, garnish with coriander leaves for greater flavours.
  • finally, jeera rice is easy to prepare and taste great when served hot or cooled.
