Traditionally, it is made with rice or semolina, but can also be extended with other ingredients and vegetables. One such popular and super creamy kheer dessert is kaddu ki kheer recipe from the Hyderabadi cuisine known for its sweetness.

Continuing this tradition, I am posting this simple and creamy Pumpkin Kheer which is super tasty because of the pumpkin grates it has. Particularly when the pumpkin grates are boiled with milk and milk solids, it absorbs it to become thick and rich. Also, the bottle has its own sweet juice and flavor which when combined with milk gives a unique and flavored taste. Firstly, the recipe is prepared with just bottle gourd and does not have any other hero ingredients with it. However, you may very well add other vegetables or even the traditional rice or semiya to make it unique. Ingredients
  

  • cup lauki / kaddu / bottle gourd, grated
  • 1 tsp ghee
  • 5 cup milk
  • ¼ cup sabudana, soaked 30 minutes
  • ¼ cup cream
  • ½ cup mawa / khoya, grated
  • 3 tbsp nuts
  • 3 drops green food color
  • ¾ cup sugar
  • ½ tsp cardamom powder
  • silver vark, for decoration

Instructions
 

  • firstly, in a large kadai heat 1 tsp ghee and add 1½ cup lauki.
  • saute for 2 minutes or until the lauki turns aromatic.
  • now add 5 cup of milk and get to a boil stirring in between.
  • also, add ¼ cup sabudana and mix well.
  • boil for 5 minutes or until the sabudana and sago gets cooked well.
  • further add ¼ cup cream, ½ cup mawa, and 3 tbsp nuts. stir well.
  • add 3 drops of green food color and mix well. adding food color is optional.
  • simmer for 15 minutes or until the kheer thickens.
  • now add ¾ cup sugar and mix well.
  • boil for 5 minutes or until the kheer thickens and turns creamy.
  • further, add ½ tsp cardamom powder and mix well.
  • cool completely, and transfer to a large bowl.
  • refrigerate for 2 hours or until the kheer thickens.
  • now add nuts and decorate with silver vark.
  • finally, enjoy kaddu ki kheer chilled or you can warm it up.

  • firstly, grate the lauki really fine else it will not taste good in kheer.
  • also, adding sabudana makes kheer thick and gives a nice bubble bite.
