in this recipe, i have shown a unique and different way to prepare kaju pista roll. traditionally, it is made in a cylindrical shape with kaju roll outside with pistachios stuffing. also, the kaju based roll is made with one string sugar syrup which makes the recipe complicated. however, in this recipe, there is no cooking step and it is no-cook dessert recipe. basically, i have prepared the cashew and pistachios dough by mixing sugar and milk powder with milk and overlapped each other like a swiss roll. however, there is a disadvantage of mixing the sugar powder directly to cashew powder. it would not solidify and the end result may turn chewy. but when compared to the effort and cooking process, it is still a worth trying this recipe.

furthermore, i would like to add some more tips, suggestions and variations to kaju pista roll recipe. firstly, i would heavily recommend using high-quality milk powder to this recipe. otherwise, it may not turn soft, creamy and also not easy to shape it. secondly, in this recipe, i have shown only the combination of cashews and pistachios combination. you may easily extend the recipe to other dry fruits like almond and walnuts. lastly, before slicing the sweet, you need to freeze it for a minimum of 10 minutes. it helps to set the shape and also does not squeeze when it is sliced.

Ingredients
  

for cashew layer:

  • 1 cup cashew
  • 1 cup milk powder, unsweetened
  • 1 cup powdered sugar
  • ¼ tsp cardamom powder
  • 2 tbsp ghee / clarified butter
  • ¼ cup milk

for pistachio layer:

  • 1 cup pistachios
  • 1 cup milk powder, unsweetened
  • 1 cup powdered sugar
  • ¼ tsp cardamom powder
  • 2 tbsp ghee / clarified butter
  • few drops green food colour, optional
  • ¼ cup milk

Instructions
 

  • firstly, pulse and powder 1 cup cashew to a fine powder.
  • sieve the cashew powder into a large bowl. make sure there are no large cashew pieces.
  • add 1 cup milk powder, 1 cup powdered sugar and ¼ tsp cardamom powder.
  • mix well making sure everything is well combined.
  • now add 2 tbsp ghee and mix until the mixture turns moist.
  • further add ¼ cup milk and start to knead a dough.
  • knead to a soft dough adding milk if required. keep aside.
  • to prepare pistachios dough, take 1 cup pistachios and blend to a fine powder.
  • sieve the powder into a large bowl.
  • add 1 cup milk powder, 1 cup powdered sugar and ¼ tsp cardamom powder.
  • mix well making sure everything is well combined.
  • now add 2 tbsp ghee, few drops green food colour and mix until the mixture turns moist.
  • further, add ¼ cup milk and start to knead a dough.
  • knead to a soft dough adding milk if required.
  • place the butter paper and roll the pistachios dough into a thin layer.
  • also roll cashew dough into a thin layer.
  • now place pistachios layer over cashew layer.
  • roll tight making sure the layers are intact.
  • wrap in a cling wrap and freeze for 10 minutes.
  • now cut into thick or thin slices depending on your preference.
  • finally, kaju pista roll is ready to enjoy or store in the refrigerator for a week.
