Kashmiri Pulao Recipe | Saffron Rice Recipe | How to Make Kashmiri Pulav with detailed photo and video recipe. Rice is the staple food of the Kashmiri people, and pulao recipes with saffron and dry fruits are the most popular. This flavoured pulao is particularly consumed with meat and tomato onion raita for lunch and dinner. It can also be an excellent lunch box recipe for a working couple or kids’ tiffin boxes.

Kashmiri Pulao Recipe | Saffron Rice Recipe | How to Make Kashmiri Pulav with step-by-step photo and video recipe. Traditionally, pulav recipes are savoury and spicy and cooked with many vegetables. However, this recipe is unconventional, prepared with several dry fruits and raisins, and is generally sweeter. Moreover, like any other Kashmiri recipe, even this exotic pulav contains crushed fennel aroma.

This is one of the rice or pulav recipes I like, even though it is sweeter and not savoury. I do not prefer sweet curries, sweet rice, or breakfast in my day-to-day meals. However, Kashmiri pulao is exceptional, perhaps because of the pistachios, cashews, and raisins. Unfortunately, my husband dislikes this recipe, and he doesn’t like raisins and cashews in pulao and biryani recipes. Hence, I prepare this recipe less often, which could be one reason for posting this popular recipe so late. But whenever I prepare it, I make some spicy curries as a side dish to this pulao. I recommend mirch ka salan, but the choice is open-ended, and veg or meat-based curries can be an excellent option.

Authentic Saffron Rice Pulao

Furthermore, here are some essential tips and suggestions for a perfect and aromatic Kashmiri pulav recipe. Traditionally, this pulav recipe does not contain any vegetables. However, this recipe is open-ended, and veggies can be added. Diced carrots, beans, peas and even potatoes can be added. Secondly, I added soaked basmati rice for about 30 minutes, which hastens the cooking process. It also helps to make a moist and flavoured pulao rice. Lastly, for an authentic Kashmiri pulao recipe, always use Kashmiri red chilli powder, which is mild and flavoured. You can also add some green slit chillies to make it mild to medium spicy.

Ingredients
  

  • 2 tbsp ghee
  • 2 tbsp cashew
  • 2 tbsp almonds
  • 2 tbsp raisins
  • 1 inch cinnamon
  • 1 pod black cardamom
  • ½ tsp cloves
  • 1 tsp cumin
  • 1 bay leaf
  • 1 onion, sliced
  • 1 inch ginger, grated
  • 1 tsp fennel
  • ½ tsp cardamom powder
  • 2 cup water
  • 1 cup basmati rice, soaked
  • 1 tsp salt
  • few saffron strands
  • few pomegranate

Instructions
 

  • Firstly, in a pan, heat 2 tbsp ghee and 2 tbsp cashew, 2 tbsp almonds and 2 tbsp raisins.
  • Fry on a low flame till it turns crunchy, keep aside.
  • In the same ghee, add 1 inch cinnamon, 1 pod black cardamom, ½ tsp cloves, 1 tsp cumin and 1 bay leaf. Saute till the spices turn aromatic.
  • Also add 1 onion, 1 inch ginger and fry till the onion turns golden brown.
  • Now add 1 tsp fennel, ½ tsp cardamom powder and saute slightly.
  • Further, add 2 cups of water, 1 cup of basmati rice, and 1 tsp of salt. Stir and bring to a boil.
  • Now add a few saffron strands, cover and simmer for 20 minutes.
  • Once the rice is cooked well, add fried nuts, a few pomegranate seeds, and rest for 5 minutes.
  • Finally, enjoy Kashmiri Pulao Recipe topped with fresh pomegranate.
