i am a huge fan of sev and its varieties and so is my husband. we both need it, not just as a snack but also as taste enhancer with most of our breakfast recipes. particularly with poha or upma, we always relish it with a generous amount of sev or namkeen with it. hence i always end up stashing a different kind of sev in an airtight container. one of the most common sev i end up making is the lahsun sev recipe or garlic sev recipe. we both like it for the extra flavour it delivers with the plain sev. however we may not use it on all days because of the garlic, especially during the festival season. but it is completely up to individual preference.

anyway, i would like to highlight some of the tips, suggestions and variations for a perfect lahsun sev recipe or garlic sev. firstly, i have added 8 garlic cloves which should be sufficient for the below mentioned besan quantity. having said that you can also increase or decrease as per your taste. secondly i have used flower sized shaper which should be perfect for this recipe. yet you can explore the thin or even thicker if you prefer to do so. lastly deep fry these in a medium to low flame so that it gets cooked evenly. also do not overcrowd these while frying and fry them in small batches.

Ingredients
  

  • 8 clove garlic
  • ½ tsp ajwain / carom seeds
  • ½ tsp pepper
  • ¼ tsp turmeric
  • ½ tsp kashmiri red chilli powder
  • 3 tbsp oil
  • pinch hing / asafoetida
  • ¾ tsp salt
  • 2 cup besan / gram flour
  • water, for blending & kneading
  • oil, for frying

Instructions
 

  • firstly, in a blender take 8 clove garlic, ½ tsp ajwain, ½ tsp pepper, ¼ tsp turmeric and ½ tsp chilli powder.
  • blend to smooth paste adding ¼ cup water.
  • transfer the masala paste into a large mixing bowl.
  • add 3 tbsp oil, pinch hing and ¾ tsp salt.
  • whisk and mix well making sure everything is well combined.
  • add in 2 cup besan and mix using a spoon.
  • further add ¼ cup water and start to knead.
  • knead to smooth and super soft dough adding water as required.
  • take the flower mould and grease the chakli maker.
  • stuff in ball sized dough into the press.
  • further, press and spread the sev in hot oil forming a circle in the oil and make sure you do not overlap.
  • after a minute, flip over and fry the other side till it turns golden and crisp.
  • drain over kitchen paper to absorb oil.
  • finally, break lahsun sev into pieces and enjoy tea time snack.

notes:

  • firstly, make a smooth paste of garlic else it may be difficult to press.
  • also, knead to super softer the dough to get crispy and tasty sev.
  • additionally, you can also add cumin along with ajwain for flavour.
  • finally, fry lahsun sev on medium flame to prevent from burning.
