Typically it is made with rice or Jowar flour, but it can be easily mixed and matched to make it more interesting and nutrient-rich. One such innovative and exciting Thalipeeth is the Lauki Thalipeeth known for its attractive and tasty texture.

I have posted several Thalipeeth recipes in my blog till now, but this recipe of Dudhi Thalipeeth has to be interesting and unique. Till now all the Thalipeeth I have prepared is with different types of flour. There were no vegetable grates added to it. Adding vegetables can make it complicated, but certainly makes it a more healthy and balanced meal. In this, I have added a combination of carrot and bottle gourd which not only makes it tasty but also loaded with nutrients. The vegetable combination is open-ended and hence you may add any type of vegetable as per your preference. However, keep it simple as adding multiple vegetables can make it difficult to spread and roll.

However, it is not mandatory and you can use Bajra, Jowar, ragi, or a combination of these to make it more interesting. Secondly, use fresh and juicy bottle gourd for the best result. Ingredients
  

  • 2 cup lauki / sorekayi / bottle gourd / dudhi, grated
  • 2 tbsp carrot, grated
  • ½ onion, finely chopped
  • 2 chilli, finely chopped
  • few curry leaves, chopped
  • 2 tbsp coriander, chopped
  • 2 tbsp sesame
  • 2 tbsp chana dal, soaked
  • ½ tsp chilli powder
  • ¼ tsp turmeric
  • 1 tsp cumin
  • 1 tsp salt
  • 2 cup rice flour
  • water, for kneading
  • oil, for roasting

Instructions
 

  • Firstly, peel the skin of lauki and grate 2 cup lauki. Take the grated lauki into a large bowl.
  • Add 2 tbsp carrot, ½ onion, 2 chilli, few curry leaves, 2 tbsp coriander, 2 tbsp sesame.
  • Also add 2 tbsp chana dal (soaked for 30 minutes), ½ tsp chilli powder, ¼ tsp turmeric, 1 tsp cumin and 1 tsp salt.
  • Mix well making sure all the spices are well combined.
  • Further, add 2 cups rice flour, squeeze and mix well.
  • Add water as required and prepare a soft dough.
  • Now grease the tawa with oil. Spread a generous amount of oil to make a crispy thalipeet.
  • Take a ball-sized dough and start to pat on the tawa.
  • Pat and spread as thin as possible, also make some holes in the centre to roast uniformly.
  • Now place the tawa on flame and cook on medium flame.
  • Lower the flame until the thalipeeth turns golden brown and crispy.
  • Flip over and cook both sides.
  • Finally, enjoy Lauki Thalipeeth Recipe with raita or chutney.

How to make Lauki Thalipeeth with step-by-step photos

  • Firstly, i have added only rice flour to make a dough, you can also add bajra, jowar and besan.
  • Additionally, adjust the amount of water depending on the juice of dudhi.
  • Also, roast the Sorakaaya Sarvapindi on low to medium flame to make it crispy.
