as i was explaining earlier, thepla recipes are typically made and served as travel meal. the dough for thepla is pre-mixed with spices and herbs which makes it a complete and satisfying meal. in this case, i have added grate of bottle gourd with spices like red chilli powder, coriander powder and cumin. hence when you are travelling it does offer you a combination of both plain roti with a curry. i personally like this thepla for my husband’s lunch box. no mess, and you can consume with either a pickle or with plain yogurt. especially when you run out of options to have something healthy, yet quickly, thepla has been always a solution.

furthermore, i would like to highlight some tips, suggestions and variations to lauki thepla recipe. firstly, you need to be extremely careful while adding water to the dudhi na thepla dough. this is due to the fact that lauki grate already has a sufficient amount of moisture in it. hence add water in small batches till the dough becomes soft. secondly, i would heavily recommend you to have a thin layered thepla rather than a thick one. this mainly due to the fact that dough is pre-mixed and you may find it difficult to fry it if the thepla is thick. lastly, the thepla can be shaped to any particular design and not bound to one particular shape.

Ingredients
  

  • 2 cup lauki / bottle gourd, peeled & grated
  • ½ tsp kashmiri red chilli powder
  • ¼ tsp turmeric
  • ½ tsp coriander powder
  • ½ tsp cumin powder
  • ¼ tsp ajwain / carom seeds
  • 1 chilli, finely chopped
  • 1 tsp ginger pasate
  • 1 tsp kasuri methi
  • 2 tbsp coriander, finely chopped
  • 1 tsp salt
  • 2 cup wheat flour / atta
  • ½ cup besan / gram flour
  • ¼ cup curd / yogurt
  • 2 tbsp oil

Instructions
 

  • firstly, peel the skin of lauki and grate finely discarding the seed.
  • take 2 cup of grated lauki into a large bowl.
  • also, add ½ tsp chilli powder, ¼ tsp turmeric, ½ tsp coriander powder, ½ tsp cumin powder and ¼ tsp ajwain.
  • further add 1 chilli, 1 tsp ginger paste, 1 tsp kasuri methi, 2 tbsp coriander and 1 tsp salt.
  • mix well making sure all the spices are well combined.
  • now add 2 cup wheat flour, ½ cup besan and ¼ cup curd.
  • knead the dough adding more wheat flour if required.
  • knead for 5 minutes or until a soft dough is formed.
  • further, add 2 tbsp oil and continue to knead well.
  • pinch a ball sized dough and dust with wheat flour.
  • dust with wheat flour and roll to small disc.
  • further, roll it in thinly like chapati or paratha.
  • now on a hot tawa place, the rolled thepla and cook for a minute.
  • furthermore, when the base is partly cooked, flip the dudhi thepla.
  • also, spread ½ tsp olive oil / ghee and press slightly both the sides.
  • flip again once or twice till both the sides are cooked properly.
  • finally, serve lauki thepla with raita and pickle.

notes:

  • firstly, make sure not to take bitter lauki for preparing thepla.
  • also, if you like spicy thepla then increase the amount of chilli.
  • additionally, lauki has good water content, so do not add any extra water while kneading dough.
  • finally, lauki thepla recipe tastes great when prepared thinly.
