Palak Pulao Recipe | Palak Rice | Spinach Rice – Lunch Box Meal with detailed photo and video recipe. An excellent lunch box meal or flavored rice recipe made with basmati rice and dark green spinach leaves. It is an extension of the traditional pulao recipe but with the goodness of Spinach puree. It can be an ideal choice for lunch boxes particularly for working couples and school-going kids.

Palak pulao is one of the easiest and healthiest rice recipes out of all the flavored rice recipes. there are several ways of preparing the palak rice recipe, but I am sharing the easiest recipe with cooked rice. This Pulav recipe is ideal for tiffin boxes to be prepared in the busy mornings or even for breakfast.

Spinach pulao is my mom’s favorite rice recipe. She prepares this recipe recipe quite frequently for her lunch boxes. Her quick and easy recipe is to use the leftover palak paneer curry to make the flavored Palak Rice. She refers to it as palak paneer pulao and I like it because it contains both palak puree and paneer cubes in it. However, in this recipe, I have not used leftover palak paneer gravy. I have prepared the spinach puree freshly and used it to prepare this rice. It does take a lot of time to make this way but it is better to make it this way.

Furthermore, some more important tips, suggestions, and variants to flavored Palak Rice or Spinach Rice. Firstly, try to use English green-leaf spinach for this recipe. Avoid using others as you may not get the same dark color and taste. Secondly, you may use your leftover palak paneer or any palak-based gravy for this curry. However, it may not be the same taste as the set of spices used are slightly different. Lastly, I would recommend using basmati rice for this pulao. Avoid using other types of rice as it may not end up with the same non-sticky texture.

Ingredients
  

for palak puree:

  • 1 bunch palak
  • 4 cloves garlic
  • 2 inch ginger
  • 3 chilli

for pulao:

  • 2 tbsp ghee
  • 1 tsp cumin
  • 1 onion, sliced
  • 1 carrot, chopped
  • 1 potato, chopped
  • ½ capsicum, chopped
  • 3 tbsp sweet corn
  • 3 tbsp peas
  • 2 cup water
  • 1 tsp salt
  • ½ tsp garam masala
  • 1 cup basmati rice, soaked 20 mins
  • 2 tsp lemon juice

Instructions
 

  • Firstly, in a saucepan take water and get to a boil. Once the water comes to a boil, add 1 bunch palak and dip completely.
  • Boil for 2 minutes or until the palak is blanched.
  • Drain off the palak and rinse in ice cold water to retain the colour of the palak.
  • Squeeze the water from the palak, and transfer to the mixer jar.
  • Add 4 cloves garlic, 2 inch ginger and 3 chilli.
  • Grind to fine paste without adding water. Keep aside.
  • In a large kadai, heat 2 tbsp ghee. Add 1 tsp cumin and splutter.
  • Add in 1 onion and saute until the onion softens.
  • Further add 1 carrot, 1 potato, ½ capsicum, 3 tbsp sweet corn and 3 tbsp peas.
  • Stir fry until the vegetables turn crunchy.
  • Now add in prepared palak paste and cook well.
  • Further add 2 cup water, 1 tsp salt and ½ tsp garam masala.
  • Mix and get to a rolling boil.
  • Once the water comes to a boil, add 1 cup basmati rice (soaked 20 mins) and mix gently.
  • Also, add 2 tsp lemon juice, cover and simmer for 20 minutes.
  • Once the rice is cooked well, fluff the rice gently.
  • Finally, enjoy Palak Rice Recipe with raita.

  • Also, the palak rice can be prepared with leftover rice by just mixing it with masala.
  • Additionally, make sure to boil and blanch the palak to get a better flavour.

  1. hi… I tried this yesterday for dinner and they all loved it… kids dont like palak … however they relished on this rice… i did make a few amendments its like by adding / sprinkling a little chings fried rice masala and maggi cube to gv it a tangy flavour… pls keep posting such wonderful recipes
