as i mentioned previously, this recipe of lemon rice recipe is typically served for morning breakfast in south india. more importantly, it is made with leftover rice from the previous day of lunch or dinner. basically the leftover rice makes it an ideal ingredient for this recipe. in other words, the rice is dry and moisture free and thus easily mixes with the spices and lemon juice. having said that, the chitranna rice can also be made with freshly cooked rice too. but extra precautions have to be taken to make it moisture free and dry before it is used in the recipe.

furthermore, i would like to add some tips, suggestions and variations to lemon rice recipe. firstly, i would heavily recommend using short-grain rice like sona masuri or any day to day rice options. particularly avoid basmati rice as it is mainly used for premium rice options. secondly, the chitrannam recipe has to be served immediately once it is prepared. this is for the fact that it would lose its moisture once it is rested and would turn dry. lastly, the same recipe can be extended further to be made with finely grated raw mango. it would add more flavour and sourness with lemon juice.
