Chutney or spicy condiments are perhaps one of the most important taste enhancers in Indian cuisine. Typically, it is made with peels, vegetables or fruits to have a dense or bright-coloured coarse texture. However, there are other types of interesting chutney and plastic chutney is one such easy, simple and attractive chutney known for its appearance.

I am a huge fan of chutney recipes, but my choice is generally for morning breakfast and simple coconut-based chatni for lunch and dinner. Basically, the taste is derived from my native South Indian cuisine. However, chutney or taste enhancer condiments are very generic and every region and state of India has their own little variations and types. This raw papaya chutney or popularly known as plastic chutney is from Bengali cuisine. Typically it is prepared for big occasions feast of its unique taste and appearance. Basically, raw papaya slices are cooked in sugar syrup which gives a premium texture. Additionally, with sugar syrup, it is later tossed with chillies which makes it a perfectly sweet, spicy and savoury chutney recipe.

Raw Papaya Transparent Chutney Furthermore, some more related and additional tips, suggestions and variations to the classic plastic chutney. Firstly, the papaya has to be young and tender without any additional sweetness from the papaya fruit. If it is not raw or slightly ripe, it may literally dissolve and may turn into a halwa instead of chatni. Secondly, if you do not wish to slice the papaya thinly, you may grate it thinly which should also help in preparing the chutney. However, you need to be more careful as it may form a lump and may again dissolve. Lastly, if you wish to have it spicy and then less sweetness, you may reduce the sugar quantity. Also, you may use jaggery as an alternative to sugar to make it a healthy alternative.

Ingredients
  

  • ½ raw papaya
  • 1 tbsp oil
  • 1 cup water
  • 1 cup sugar
  • ¼ tsp salt
  • ½ tsp kalonji seeds
  • 2 tbsp cashew
  • 2 tbsp raisins
  • ½ lemon

Instructions
 

  • firstly, remove the seeds and peel the skin of raw papaya.
  • slice the papaya as thin as possible.
  • rinse and soak in water to remove the latex.
  • heat 1 tbsp oil, and saute the sliced papaya for a minute.
  • add 1 cup water and boil for 10 minutes.
  • now add 1 cup sugar and mix well.
  • now add ¼ tsp salt, ½ tsp kalonji seeds, 2 tbsp cashew, and 2 tbsp raisins.
  • mix well and boil for 10 minutes or until the papaya turns translucent.
  • add ½ lemon to prevent sugar syrup from caramelizing.
  • continue to cook until the papaya turns translucent and slightly yellowish.
  • finally, enjoy Plastic Chutney with rice or roti.

  • also, adjust the amount of sugar based on the sweetness you are looking for.
  • additionally, add more water if the papaya is uncooked.
