rava ladoo recipe | rava laddu recipe | sooji laddu or sooji ladoo with detailed photo and video recipe. a simple indian sweet recipe that can be prepare within minutes and with simple available ingredients in our kitchen. the basic ingredients involved in this recipe is sugar, rava / semolina and coconut. it is an ideal sweet for diwali celebrations or for any festivals and occasions.
rava ladoo recipe | rava laddu recipe | sooji laddu or sooji ladoo with step by step photo and video recipe. laddu recipes are common sweet recipes during festival season and rava laddu is one such sweet recipe. unlike other indian ladoo’s, it requires only few main ingredients. basically it is prepared with roasted semolina, coconut, sugar and dry fruits.
there are several easy recipes of rava ladoo, for ex, with khoya, with condensed milk and even with honey. but traditionally it is prepared with just sugar syrup and milk used as binding agent. some even do not prefer milk, but i use it while shaping the ladoo or if the semolina turns brittle after adding the sugar syrup. in addition i even sometime skip coconut and keep sooji laddu simple or add coconut to prepare suji coconut ladoo recipe. but downside of adding fresh coconut is, it has to be finished immediately. alternatively use desiccated coconut for better shelf life.
furthermore some important tips and suggestions for a perfect and smooth rava ladoo or rava laddu recipe. firstly, use coarse rava to get nice texture to ladoo and roast with fresh ghee for more flavour. also make sure to increase / decrease the amount of sugar according to your taste bud. lastly, if the mixture turns brittle, add few tbsp of milk and make ladoo.

Ingredients
- ¼ cup ghee / clarified butter
- 6 cashew / kaju, chopped
- 2 tbsp raisins / kishmish
- 1 cup rava / semolina / sooji, coarse
- ¼ cup desiccated coconut
- 1 cup sugar
- ¼ cup water
- ¼ tsp cardamom powder / elachi powder
- 2 tbsp milk, if required
Instructions
- firstly, in a wide pan fry 6 chopped cashew and 2 tbsp raisins with ¼ cup ghee.
- fry until raisins puff up and cashews turn golden brown. transfer them to the plate and keep aside.
- in the same pan add 1 cup rava and roast on low flame.
- roast the sooji until it changes colour to light brown and turns aromatic.
- further add ¼ cup desiccated coconut and roast for a minute more.
- turn off the flame and allow rava to cool to room temperature.
- meanwhile, take another vessel and prepare sugar syrup by taking 1 cup sugar and ¼ cup water.
- further boil for 5 minutes or till you get one string consistency.
- turn off the flame add add roasted rava to sugar syrup.
- also add in roasted cashew, raisins and ¼ tsp cardamom powder.
- stir continuously to avoid any lumps formation.
- after a minute, rava absorbs the sugar syrup.
- when its still warm enough, prepare laddus with your palm.
- finally, serve rava ladoo / suji laddu once cooled completely or store in airtight container for 2 weeks.
how to make rava laddu with step by step photo:

- further boil for 5 minutes or till you get one string consistency.
- turn off the flame add add roasted rava to sugar syrup.
- also add in roasted cashew, raisins and ¼ tsp cardamom powder.
- stir continuously to avoid any lumps formation.
- after a minute, rava absorbs the sugar syrup.
- when its still warm enough, prepare laddus with your palm. if it turns hard or if ladoos are breaking, add 2-3 tablespoons of warm milk little by little, mix well and prepare small round shaped laddu from mixture.
- finally, serve rava ladoo / suji laddu once cooled completely or store in airtight container for 2 weeks.
notes:
- firstly, roast the rava on low to medium flame, else the rava will burn.
- also sugar syrup should just attain 1 string consistency. do not over boil as the ladoo will turn more hard.
- if the ladoo mixture turns hard and not able to make laddus. then add 2-3 tablespoons of warm milk little by little, mix well and prepare small round shaped laddu from mixture.
- furthermore, avoid coconut if you do not like its flavour.
- finally, rava ladoo / suji laddu stays good for a month when refrigerated and minimum of 2 weeks in airtight container.
is it ok that in laddoo, the rawa doesn’t get soft as in halwa or upma ?
