chilli based or capsicum based pakoras are not something unique and are a common snack prepare all over india. generally, it is slit lengthwise and dipped in a spiced besan batter and deep-fried till crisp. the batter may also contain rice or corn flour which makes it crisp and brittle. but this recipe is really special as the bajji or pakora is made with the whole capsicum. perhaps, it can also be called bharwa shimla mirch pakora due to the stuffing it carries. i personally prepare this recipe as an alternative to the batata vada. basically, you can use it as vada and stuff it in between bread pav to make capsicum vada pav. as matter of fact, you can also use this and prepare curry or sabzi out of it. you may have to prepare an onion-tomato base and fry this deep-fried bajjis similar to a kofta curry.

furthermore, some more additional tips, suggestions and variants to the capsicum bajji recipe. firstly, i would heavily recommend using mini capsicums and avoid using medium or large ones. you may not be able to handle it particularly with its stuffing, coating of besan batter and also during the deep frying. secondly, if you feel potato-based stuffing is not interesting for you, you may use other popular stuffing. perhaps, you can use paneer, cheese, mixed vegetable or any leftover dry sabzi too. lastly, you may need to deep fry these at a low to medium temperature. the heat has to reach the core of the stuffing and has to be cooked thoroughly. also, try to balance the number while deep frying with a small number of batches and do not overcrowd it.

Ingredients
  

for aloo stuffing:

  • 2 potato, boiled & mashed
  • 2 chilli, finely chopped
  • ½ tsp ginger paste
  • ½ tsp chilli powder
  • ¼ tsp turmeric
  • ½ tsp aamchur
  • ½ tsp chaat masala
  • ½ tsp cumin powder
  • 2 tbsp coriander, finely chopped
  • ½ tsp salt

for besan batter:

  • 2 cup besan
  • 2 tbsp rice flour
  • ¼ tsp turmeric
  • ½ tsp chilli powder
  • ¼ tsp ajwain
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1 cup water

other ingredients:

  • 7 capsicum, small
  • oil, for frying
  • sev, for garnishing
  • onion, for garnishing

Instructions
 

  • firstly, in a large bowl take 2 potato, 2 chilli and ½ tsp ginger paste.
  • add ½ tsp chilli powder, ¼ tsp turmeric, ½ tsp aamchur, ½ tsp chaat masala, ½ tsp cumin powder, 2 tbsp coriander and ½ tsp salt.
  • mix well making sure all the spices are well combined.
  • aloo stuffing is ready. keep aside.
  • further, take small capsicum and remove the seeds from it.
  • stuff in aloo stuffing into capsicum. keep aside.
  • to prepare the besan batter, in a bowl take 2 cup besan and 2 tbsp rice flour.
  • add ¼ tsp turmeric, ½ tsp chilli powder, ¼ tsp ajwain, ¼ tsp baking soda and ½ tsp salt.
  • mix well making sure everything is well combined.
  • further, add water as required and mix well.
  • mix well forming a smooth thick batter.
  • now dip the stuffed capsicum into besan batter and dip completely.
  • deep fry in hot oil, keeping the flame on medium.
  • stir occasionally, and fry uniformly until the bajji turns golden brown.
  • drain off over kitchen paper to remove excess oi.
  • now cut the aloo capsicum bajji into half.
  • top with chopped onions and crispy sev.
  • finally, enjoy capsicum bajji recipe with tea or coffee.
