i have always been a huge fan of simple and easy stir-fried rice recipes. you may have noticed it in my blog, i have posted quite a few simple and easy pulao or fried rice variants. yet i feel there are a lot of rice variants to try and i keep exploring and trying those recipes. for instance, the burnt garlic rice is prepared almost similar to the traditional fried rice, yet so popular for its flavour and additional taste. i personally prefer this recipe compared to the traditional one as it has more taste and flavour. moreover, due to the use of garlic i personally feel it can go very well with indian dal recipes too. my recommendation is to try this recipe with moong dal tadka or even toor dal tadka. you should try this and let me know if you prefer this combination?

furthermore, some more additional tips, suggestions and variants to the burnt garlic fried rice recipe. firstly, i have used leftover rice for this recipe. these are dry and moisture free and hence they can be easily stir-fried with sauces and condiments. you may also use freshly cooked rice, but ensure to cool it down and then use it. secondly, i have used long grain rice basmati for this recipe. well, basmati is not a must but when prepared with it, looks more elegant. also, you may use sona masuri, jasmine rice or even ponni rice. lastly, if you wish to make it spicier, you may either use slit green chillies added directly to the sauce or increase the white pepper quantity.

Ingredients
  

  • 2 tbsp oil
  • 10 clove garlic, sliced
  • 1 inch ginger, finely chopped
  • 2 chilli, finely chopped
  • 2 tbsp spring onion, chopped
  • ½ onion, finely chopped
  • ½ carrot, chopped
  • ½ capsicum, finely chopped
  • 10 beans, chopped
  • 3 tbsp sweet corn
  • 2 tbsp chilli sauce
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 3 tbsp cabbage, shredded
  • 1 tsp pepper powder
  • 1 tsp salt
  • 4 cup cooked rice

Instructions
 

  • firstly, in a large wok heat 2 tbsp oil. add 10 cloves of garlic and fry until it turns golden brown and crunchy.
  • add 1 inch ginger, 2 chilli, 2 tbsp spring onion and stir fry.
  • now add ½ onion and stir fry until the onions shrink slightly.
  • further add ½ carrot, ½ capsicum, 10 beans, 3 tbsp sweet corn and stir fry until the vegetables turn crunchy.
  • make sure not to overcook the vegetables as it turns mushy.
  • make some gap and add 2 tbsp chilli sauce, 2 tbsp soy sauce and 1 tbsp vinegar.
  • stir fry until the sauces are well combined.
  • now add 3 tbsp cabbage, ½ tsp pepper powder and ½ tsp salt. stir fry slightly.
  • further, add 4 cup of cooked rice, ½ tsp pepper powder and ½ tsp salt.
  • stir fry making sure everything is well combined without breaking rice.
  • finally, add 2 tbsp spring onion, and enjoy burnt garlic fried rice.
