dal dhokli recipe | how to make traditional gujarati dal dhokli with detailed photo and video recipe. a traditional gujarati one pot meal recipe made with toor dal and wheat dough. it is one pot meal which is served and does not need any rice or flatbread with it as it does contain both. having said that it can be served as a side dish too with rice and or roti chapati and thus making a complete meal.
well, i make types of dal dhokli recipe on day to day basis with my leftover dal and leftover roti/chapatis. but it is an ad-hoc recipe where i do not follow the traditional approach and mix with whatever leftover dish available. whereas in this recipe, i have followed the authentic gujarati style where i have added uncooked roti directly to the boiling dal curry. also, i have prepared the dal specific to dhokli recipe respecting the authentic style.
furthermore, some tips, suggestions, and variations to this authentic gujarati dal dhokli recipe. firstly, ensure to roll thin dhoklis as the thick one would require more time to cook in dal. moreover, uncooked dhokli may create indigestion problems after consumption. secondly, add the thin dhokli one by and do not overcrowd it dal soup. overcrowding may result in dhokli sticking to each other and my form lump while boiling. lastly, the combination of wheat and lentil would make the curry thick when it cools down. hence you may need to add water and bring it desired consistency if you are serving it for later.

Ingredients
for dal:
- ½ cup toor dal, rinsed
- 1½ cup water
- 1 tsp oil
- 2 tbsp peanuts
- 1 tsp ghee / clarified butter
- 1 tsp mustard
- ½ tsp cumin / jeera
- 1 chilli, broken
- pinch hing / asafoetida
- few curry leaves
- 1 tomato, finely chopped
- 1 tsp ginger garlic paste
- 1½ cup water
- ¼ tsp turmeric
- ¾ tsp kashmiri red chilli powder
- ¼ tsp cumin powder
- ½ tsp coriander pwoder
- ¼ tsp garam masala
- small piece jaggery / gud
- ¾ tsp salt
- 1 tsp lemon juice
- 2 tbsp coriander, finely chopped
for dhokli:
- 1 cup wheat flour / atta
- ¼ tsp turmeric
- ½ tsp kashmiri red chilli powder
- ¼ tsp ajwain / carom seeds
- ½ tsp salt
- 2 tsp oil
- ½ cup water
Instructions
- in a large kadai heat 1 tsp ghee and splutter tempering.
- further add 1 tomato, 1 tsp ginger garlic paste and saute until tomatoes turn soft and mushy.
- add in cooked dal, 1½ cup water and mix well adjusting consistency as required.
- also add ¼ tsp turmeric, ¾ tsp chilli powder, ¼ tsp cumin powder, ½ tsp coriander powder and ¼ tsp garam masala.
- combine well making sure all the spices are mixed well.
- additionally add cooked peanuts, small piece jaggery, ¾ tsp salt and 1 tsp lemon juice.
- once the dal comes to a boil, drop in dhokli pieces and give a good mix well.
- cover and boil for 10-15 minutes or until dhokli is cooked completely.
- finally, add 2 tbsp coriander and enjoy dal dhokli with hot steamed rice.
how to make dal dhokli with step by step photo:
- firstly, in a cooker take ½ cup toor dal, 1½ cup water, 1 tsp oil.
- in a small bowl keep 2 tbsp peanuts.
- pressure cook for 5 whistles or until the dal is cooked well.
- take off the boiled peanuts and keep aside.
- whisk and mash the dal to smooth consistency.
- now in a large kadai heat 1 tsp ghee and splutter 1 tsp mustard, ½ tsp cumin, 1 chilli, pinch hing and few curry leaves.
- further add 1 tomato, 1 tsp ginger garlic paste and saute until tomatoes turn soft and mushy.
- add in cooked dal, 1½ cup water and mix well adjusting consistency as required.
- also add ¼ tsp turmeric, ¾ tsp chilli powder, ¼ tsp cumin powder, ½ tsp coriander powder and ¼ tsp garam masala.
- combine well making sure all the spices are mixed well.
- now add in cooked peanuts and boil for 1 minute or until flavours are absorbed.
- additionally add small piece jaggery, ¾ tsp salt and 1 tsp lemon juice.
- stir and boil. keep aside until dhokli is prepared.
dholki preparation recipe:
- firstly, in a large mixing bowl take 1 cup wheat flour, ¼ tsp turmeric, ½ tsp chilli powder, ¼ tsp ajwain, ½ tsp salt and 2 tsp oil.
- combine well until the spices are well combined.
- further, add ½ cup water and knead the dough.
- knead to smooth and soft dough.
- take a ball sized dough, dust with wheat flour.
- roll to slightly thick consistency dusting wheat flour if required.
- cut into diamond shapes or size of your choice.
- once the dal comes to a boil, drop in dhokli pieces and give a good mix well.
- cover and boil for 10-15 minutes or until dhokli are cooked completely.
- finally, add 2 tbsp coriander and enjoy dal dhokli with hot steamed rice.
notes:
- firstly, adjust the consistency of dal as required. the dal thickens once cooled.
- also, cut the shape of dhokli to your choice. however, diamond shapes look more attractive.
- additionally, adding jaggery will enhance the flavour of dal.
- finally, dal dhokli recipe tastes great when dhokli is well cooked completely.
