i have already shared the simple schezwan fried rice which is very similar to this recipe. however, this is prepared with mixing of noodles and rice and served with fried noodles and schezwan gravy. hence this recipe is named as triple schezwan rice which is combination of three ingredients. in this recipe i have used homemade schezwan sauce, but you can easily prepare with store bought too. moreover this recipe is an adaptation to chicken schezwan fried rice by skipping the deep fried chicken meat for vegetarian lovers.
like any other indo chinese cuisine recipes, triple schezuan rice recipe is very simple to prepare. but i would like to highlight few variations and tips for a perfect recipe. firstly, rice should not be fully cooked and ideally should be dry for stir frying. moist or fully cooked rice would not yield a desirable result. secondly, always stir fry the vegetables on a high flame and do not cook them completely and should still be crunchy. almost all indo chinese recipes would follow the same pattern. lastly, the manchurian gravy is optional, but i would heavily recommend preparing and serving with this rice.

Ingredients
for schezwan rice & noodles:
- 3 tsp oil
- 1 tbsp garlic, finely chopped
- 4 tbsp spring onions, chopped
- ½ cup carrot, thinly sliced
- ½ cup cabbage, thinly shredded
- 1 capsicum, thinly sliced
- 2 tsp schezwan sauce / szechuan sauce
- 1 tbsp soy sauce
- 1 tbsp tomato sauce
- salt to taste
- 2 cups basmati rice, cooked
- 1 cup hakka noodles or any noodles, boiled
for gravy:
- 2 tsp oil
- 1 tbsp garlic, finely chopped
- 2 tbsp spring onions, chopped
- ½ cup cabbage, thinly shredded
- ¼ capsicum, thinly sliced
- 1 tsp schezwan sauce / szechuan sauce
- 1 tbsp tomato sauce
- salt to taste
- 1 tbsp soy sauce
- 1 tbsp corn flour
- 1½ cups water
Instructions
schezwan fried rice & noodles:
- firstly, in a large kadai heat oil and saute garlic on high flame.
- further saute chopped spring onions till they sweat.
- also add carrot, cabbage and capsicum.
- and saute for a minute.
- additionally add schezwan sauce, soy sauce, tomato sauce and salt.
- mix well and saute for a minute.
- furthermore, add cooked rice and cooked noodles.
- mix gently, and add spring onions.
gravy preparation:
- firstly, in a large kadai heat oil and saute garlic and spring onions.
- also add cabbage and capsicum. saute for a minute
- additionally add schezwan sauce, tomato sauce, soy sauce and salt.
- mix well and saute for a minute.
- further pour cornflour water slowly, mixing continuously.
- stir till the gravy thickens slightly.
- and also slowly turns shiny and translucent.
- finally, serve hot triple schezwan fried rice recipe with prepared gravy and fried noodles.
how to make triple schezwan fried rice with step by step photo:
schezwan fried rice & noodles:
- firstly, in a large kadai heat oil and saute garlic on high flame.
- further saute 2 tbsp chopped spring onions till they sweat.
- also add carrot, cabbage and capsicum.
- and saute for a minute. do not over fry the vegetables they will loose the crunchiness.
- additionally add schezwan sauce, soy sauce, tomato sauce and salt.
- mix well and saute for a minute.
- furthermore, add cooked basmati rice and cooked hakka noodles.
- mix gently, without breaking the rice grains.
- add spring onions, and set aside.
gravy preparation:
- firstly, in a large kadai heat oil and saute garlic on high flame.
- further saute 2 tbsp chopped spring onions till they sweat.
- also add cabbage and capsicum.
- and saute for a minute. do not over fry the vegetables they will loose the crunchiness.
- additionally add schezwan sauce, tomato sauce, soy sauce and salt.
- mix well and saute for a minute.
- furthermore, dissolve 1 tbsp of  corn flour in 1½ cup of water.
- mix well till there are no lumps left out in the cornflour water.
- now pour slowly mixing continuously to avoid any lumps from formation.
- keeping the flame on medium, stir continuously.
- stir till the gravy thickens slightly.
- and also slowly turns shiny and translucent.
- finally, transfer to a small bowl and keep aside.
triple schezwan rice assembling:
- firstly, place the prepared gravy and rice in separate bowl.
- further, add as much as required gravy depending on the spice level over rice.
- also garnish with fried noodles and spring onions.
- finally, serve hot triple schezwan fried rice recipe with prepared gravy.
notes:
- firstly, the name triple schezwan is due to 3 layer of presentation. ie. rice-noodles, gravy and fried noodles.
- adjust the amount of schezwan sauce depending on the spiciness.
- additionally, adding a pinch of sugar to gravy will enhance the flavour of triple szechuan rice.
- also, vary the vegetables to your choice like, brocolli, mushrooms, corn etc.
- finally, triple schezwan rice taste great when prepared spicy and served hot.

I tried with combination of groundnut oil and ghee. Is there any specific oil to be used to get more authentic Chinese cuisine taste?
