veg manchurian gravy recipe | vegetable manchurian gravy recipe with detailed photo and video recipe. vegetable manchurian is an indo chinese cuisine or indian street food recipe made with deep fried veggie balls in manchurian gravy. it is an ideal party starter or appetiser, which can also be served as gravy to fried rice or noodles recipe. it comes with 2 variants, i,e dry and gravy version, but this post is limited to gravy variant.

i am a huge fan of indo chinese cuisine and especially indian street food. during my college days, i used to have veg fried rice with either veg manchurian gravy or gobi manchurian recipes. i use to have it with a street food vendor very next to my bus stop. apparently, i had developed friendship with him. and i made sure last time when i visited to his place to share his amazing indo chinese recipes.

before diving into the actual recipe, i would like to highlight the history of indo chinese cuisine. apparently, this cuisine was started in the streets of kolkata. in those streets, the techniques and equipments used were similar to that of chinese cuisine. however the ingredients were replaced with the locally available indian food ingredients. gradually, this cuisine has been embraced by whole india.

easy veg manchurian gravy recipe | vegetable manchurian gravy recipe

Ingredients (1 cup = 255 ML)
to prepare veg balls:
  • ¼ cup carrot grated
  • 1 tsp soy sauce
  • ¼ cup cabbage grated
  • 1 tsp chilli sauce
  • ¼ cup spring onion greens chopped
  • 2 tbsp maida / plain flour / all-purpose flour
  • ¼ tsp ginger-garlic paste
  • 2 tbsp corn flour
  • ¼ tsp black pepper crushed
  • oil for deep frying
to prepare manchuirian gravy:
  • 1 tbsp oil
  • ½ tsp ginger finely chopped
  • ½ tsp garlic finely chopped
  • 1 spring onion chopped
  • ¼ capsicum cubed
  • 1-2 tsp chilli sauce adjust to your spice level
  • 2-3 tsp soy sauce adjust to your taste
  • 1 cup water
  • ¼ tsp black pepper crushed
  • salt to taste
to prepare corn starch:
  • 2 tsp corn flour
  • ¼ cup water
Instructions
veg balls recipe:
  1. in a large mixing bowl add grated carrot, cabbage and spring onion greens.
  2. add a tsp of soy sauce.
  3. also add chilli sauce, ginger garlic paste and crushed black pepper. note, we are not adding any salt as soy sauce do have salt in it. if you want any extra then add at this stage.
  4. squeeze the veggies well and mix well. veggies has to release water from them.
  5. now add maida and corn flour.
  6. make a nice thick dough without adding any extra water. water present in veggies are enough to combine.
  7. now make small small balls and keep aside.
  8. deep fry the balls on medium flame.
  9. stir in between and fry till they turn golden brown.
  10. drain off the veg balls over a kitchen towel to remove excess oil.

  1. in a large pan, heat a tbsp of oil.
  2. add finely chopped ginger and garlic. saute for a while.
  3. then add spring onions white and continue to saute for a minute.
  4. also add capsicum and fry till the blisters appear over them.
  5. now add red chilli sauce and soy sauce.
  6. add corn starch. to prepare corn starch mix 2 tsp of corn flour with ¼ cup of water.
  7. give a good mix. then add a cup of water and continue to stir. alternatively, you can add water first, get to a boil and then add corn starch.
  8. add more chilli sauce if required and give a mix. i like my gravy to be more spicy so have added a tsp of more chilli sauce.
  9. check for taste, and if you prefer more savory taste then add more soy sauce. give a good mix.
  10. get to a boil and check for consistency.
  11. now add pepper and salt to taste. remember, soy sauce do contain salt so be careful while adding. give a mix.
  12. add fried veg balls and give a quick stir.
  13. transfer to a serving bowl and garnish with chopped spring onions green.
  14. serve veg manchurian gravy with veg fried rice.

using chings veg manchurian masala:

  1. firstly, in a large bowl tale 1 cup grated cabbage. make sure to squeeze of the juice completely.

  2. also add 1 inch ginger, 1 chilli, 2 tbsp besan and ¼ tsp salt.

  4. now grease your hands with oil and prepare small balls.

  5. deep fry in hot oil on medium flame.

  6. stir occasionally, until manchurian balls turn golden and crisp.

  8. in a large kadai, heat 3 tsp oil and saute ¼ onion, ¼ capsicum and ¼ carrot.

  9. prepare the masala mixture by dissolving 1 cup chings veg manchurian masala with 1 cup (300ml) water.

  10. whisk until the masala is combined well.

  11. pour the masala mixture over the sauteed vegetables and mix well.

  12. also, add in prepared manchurian balls and mix well.

  13. get the mixture to a boil and stir until the sauce thickens.

notes:

  • alternatively, you can add water first, get to a boil and then add corn starch. this would make the paste smooth.
  • adjust chili sauce and soy sauce according to your taste. you may also add slit green chilies if you like it spicy.
  • you can also add finely chopped beans, cauliflowers and capsicum while preparing veg balls. this would make it more crispy and tasty.
  • for more rich flavour and taste, use maggie hot and sweet sauce. this will enhance the color of veg manchurian gravy.
