udupi sambar recipe | coconut sambar recipe | potato onion sambar with step by step photo and video recipe. typically, sambar recipes from udupi has to be prepared with coconut. there are other sambar varieties which does not have coconut but are less popular in udupi. moreover, the masala has to be freshly roasted and grated with coconut to form a thick paste.
sambar recipes plays a vital role in south indian diet, as rice is our staple food. this has certainly lead to variety of sambar recipes depending upon the region and locally available ingredients. one such variety is potato onion sambar prepared in udupi style. udupi is a small town in south west coastal part of india. being a coastal place, coconut is abundantly available and hence it is used in most of the recipes and curries. one such popular recipe is udupi sambar which is also popularly known as coconut sambar or coconut based sambar.
besides, i would like to highlight some variations to this authentic sambar recipe. the first variation is to add 3-4 slices of onions and garlic while grinding. adding onions and garlic gives a unique raw smell to this coconut sambar. secondly, if you are in a hurry, you can totally skip the roasting of spices before grating. it is known as raw masala or ‘pajji masala’, but i personally prefer roasted masala or use udupi style sambar powder. lastly, you can also add 4-5 cashews and half tsp of poppy seeds while grounding. this well help the sambar to make it more creamy and flavourful.

Ingredients
for masala paste:
- 2 tsp oil
- 2 tsp coriander seeds / dhaniya seeds
- ½ tsp cumin seeds / jeera
- 1 tsp urad dal
- ¼ tsp methi seeds
- 4-5 kashmiri dried red chili
- ½ cup coconut, fresh / desiccated / frozen
- ¼ cup water, or as required
other ingredients:
- 1 large potato, peeled and cubed
- 1 medium sized onion, petals
- 2 cups water
- 1 cup tamarind juice / extract
- few curry leaves
- 1 tsp jaggery / gud
- ¼ tsp turmeric / haldi
- salt to taste
- 1 cup cooked toor dal
for tempering:
- 2 tsp oil
- ¾ tsp mustard seeds / rai
- ½ tsp urad dal
- 2 dried red chilli
- few curry leaves
Instructions
masala paste recipe:
- firstly heat oil and roast coriander seeds, cumin seeds, urad dal, methi seeds and kashmiri dried red chili.
- furthermore, transfer to a blender and add half cup of coconut.
- also add water and blend to smooth paste.
udupi style potato-onion sambar:
- firstly, in a large kadai add cubed potatoes, onion petals add water.
- simmer for 15 minutes.
- furthermore, add tamarind juice, curry leaves, jaggery, turmeric and salt to taste.
- mix well and boil for 5 minutes.
- furthermore, add cooked dal add prepared masala paste. mix well.
- simmer for 5 minutes.
- meanwhile, heat oil in small kadai and add mustard seeds, urad dal, dried red chilli and curry leaves.
- allow the tempering to splutter then pour over prepared sambar.
- finally, udupi sambar / potato onion sambar is ready to serve with plain rice, dosa or idli.
how to make udupi sambar or coconut sambar with step by step photo recipe:
masala paste recipe:
- firstly heat oil and roast coriander seeds, cumin seeds, urad dal, methi seeds and kashmiri dried red chili.
- furthermore, transfer to a blender and add half cup of coconut.
- also add water as required.
- blend to smooth paste. keep aside.
udupi style potato-onion sambar:
- firstly, in a large kadai add cubed potatoes and onion petals.
- further add water and simmer for 15 minutes or till the potatoes are almost cooked.
- make sure to cook the potatoes well before adding masala.
- furthermore, add tamarind juice.
- also add curry leaves, jaggery, turmeric and salt to taste.
- mix well and boil for 5 minutes or till the raw smell from tamarind juice disappears.
- furthermore, add cooked dal.
- also add prepared masala paste and mix well.
- adjust the consistency by adding water as required.
- simmer for 5 minutes or till the coconut gets cooked well.
- additionally, prepare the tempering by heating oil in small kadai.
- further, add mustard seeds, urad dal, dried red chilli and curry leaves.
- allow the tempering to splutter then pour the tempering over prepared sambar.
- finally, udupi sambar / potato onion sambar  is ready to serve with plain rice, dosa or idli.
notes:
- firstly, cook the potatoes well before adding masala paste. after adding masala paste, potatoes will not cook further.
- instead of freshly preparing masala, you can also blend sambar powder along with coconut to fasten the process.
- additionally, vary the vegetables according to your choice.
- finally, udupi sambar / potato onion sambar taste great when served hot.
