it has been a while, i haven’t posted any cheese recipe. last one was stuffed cheese mushroom and it is more than 2 months now. i had quite a few shredded cheese left in fridge to attend. today, i finally decided to prepare corn cheese balls recipe with those cheese. it is also popularly known as veg cheese balls recipe. i have used mozzarella cheese in the recipe. however, cheddar cheese is also recommend and tastes good. in addition to potato, you can also add bell pepper and green peas. capsicum would give a crunchy and sweet taste to these veg cheese balls recipe.

furthermore, the recipe as such for corn cheese balls is very simple. however extra care has to be taken to prepare crispy golden melting cheese balls recipe. the mixture or dough has to be tightly rolled so that the cheese balls are firm. also, the coating plays a very important role in this recipe. i have used panko breadcrumbs and i personally recommend it for the best result. lastly, do not forget to freeze the cheese balls for a minimum of 30 minutes. this would prevent the cheese to melt and burst out while deep frying.

Ingredients
for cheese balls:
  • 1 cup grated cheese, mozzarella / cheddar
  • ¼ cup sweet corn, fresh / frozen
  • 1-2 potato, boiled and pealed
  • 1 tsp corn flour
  • ½ tsp chaat masala
  • ½ tsp pepper, crushed
  • salt to taste
other ingredients
  • ½ cup corn flour
  • 3 tbsp maida / all-purpose flour / plain flour
  • 1 cup bread crumbs
  • oil for deep frying
Instructions ( 1 cup =255 ml)
  1. firstly, in a large mixing bowl, take sweet corn. you can also use boiled sweet corn.
  2. furthermore, add shredded cheese.
  3. also add 1½ - 2 boiled potatoes.
  4. then add corn flour. this helps to bind together and remove extra moisture.
  5. furthermore add chaat masala, crushed pepper and salt.
  6. now mash the potatoes well and combine with cheese.
  7. mix well together to form a dough. if its watery, then add a tsp more corn flour.
  8. furthemore, grease your hands with oil and prepare small balls.
  9. roll it into corn flour to remove extra moisture.
  10. then further dip it into maida paste. to prepare maida paste mix 3 tbsp of maida in ¼ cup of water.
  11. after that, roll it on bread crumbs. i have used panko bread crumbs for crispy outer layer.
  12. further, freeze all the balls in freezer for about 30 minutes. this helps to prevent cheese from oozing out while deep frying.
  13. after 30 minutes, deep fry the corn cheese balls on medium flame.
  14. stir occasionally for even browning.
  15. fry the cheese balls till they turn golden brown.
  16. furthermore, once they turn golden brown, drain the balls on to kitchen towel to remove excess oil.
  17. finally, serve cheese balls immediately with masala chai.

notes:

  • firstly, add vegetables like capsicum and carrot to make it more colourful.
  • furthermore, add green chillis to make it more spicy.
  • most noteworthy, freeze the cheese balls before deep frying to prevent cheese from oozing out.
  • finally, instead of deep frying you can also bake in oven at 350°F (180°C) for 15 minutes or till turn golden brown.

  1. can i use the plain toast available in market and grind them and use it for the coating? i dont have panko crumbs available with me.
