i have already shared some of the others vada recipes and rava vade is an instant version of it. i prepare this instant vada recipe whenever i crave for a authentic idli vada for my weekend breakfast. i personally like it dipped and soaked completely in sambar and mixed with coconut chutney, but my husband prefers it separately. moreover, i even prepare baked version of this recipe too, but we both like the deep fried version. perhaps i would soon post the baked version too.

furthermore, some important tips and suggestions for a perfect crispy instant rava vada recipe. firstly, if you prefer to have a crispy vada then add 1 tbsp of rice flour and baking soda for a fluffy medu vada. if you are using a sour curd or yogurt, baking soda is not required at all. secondly, for additional flavours, add crushed or whole pepper and even finely chopped coconut. lastly, and more importantly you may find it difficult to shape the sooji vada before deep frying. dipping and cleaning the hands regularly in clean water ore greasing with oil will help them to shape perfectly.

Ingredients
  • 1 cup rava / bombay rava / semolina / sooji
  • ¾ cup curd / yogurt, sour
  • 1 tsp cumin seeds / jeera
  • 1 green chili, finely chopped
  • 5 curry leaves / kadi patta, finely chopped
  • 1 inch ginger / adrak, finely chopped
  • 2 tbsp coriander leaves, finely chopped
  • 3 tbsp onion, finely chopped
  • salt to taste
  • water if required, to prepare dough
  • oil for deep frying
Instructions ( 1 cup =255 ml)
  1. firstly, in a large mixing bowl take 1 cup of rava.
  2. further add curd. amount of curd depends on the curd thickness, so add as required. use sour curd for tasty rava vada.
  3. additionally add cumin seeds, green chili, ginger, curry leaves, coriander leaves, onion and salt.
  4. mix well to form a dough.
  5. add extra water or curd if required. if the dough turn watery add little more semolina / sooji.
  6. rest the dough for 25 minutes, so that the sooji absorbs moisture and swells.
  7. now grease both hands with oil and take a ball sized dough.
  8. flatten with hands and make a hole in centre.
  9. further, slowly drop into hot oil.
  10. and fry the vadas on medium flame stirring occasionally.
  11. fry the vadas till they turn golden brown from both sides.
  12. and drain over kitchen towel to remove excess oil.
  13. finally, serve instant rava vada with chutney and masala chai.

notes:

  • firstly, using sour curd make vada more tasty.
  • also add a pinch of soda if you prefer to have a fluffy vadas.
  • furthemore, adding onions, chili and ginger are optional. vadas can also be prepared plain.
  • additionally, add a tsp of sugar to dough to make a combination of sweet and spicy vadas.
  • finally, instant rava vadas or sooji vada can also be pan fried with little oil if you are looking for more healthier version.
