cooked rice dosa recipe | leftover rice dosa | dosa with leftover rice with step by step photo and video. perhaps one of the simple and economical dosa recipes is prepared with leftover cooked rice and plain rice for morning breakfast. it is simple as compared to the traditional dosa recipe as it uses only ¼ cup of urad dal and hence less hassle of grounding. it has a very similar texture and taste to the appam recipe and hence taste great with a choice of spicy curries or spicy chutney.

cooked rice dosa recipe | leftover rice dosa | dosa with leftover rice with step by step photo and video recipe. dosa or idli recipes are one of the most recipes for most south indian breakfasts. these are generally prepared with the combination of rice and urad dal combination with some additional toppings to make it more flavoured and tasty. however, there are some dosa recipes that may not follow these ingredients and have their own set of processes with cooked rice dosa recipe is one such recipe.

as i was explaining earlier, this recipe is very similar to the appam or the popular neer dosa recipe. it is due to the way it is prepared, the set of ingredients and the consistency of the dosa batter. firstly, the ingredients used in this recipe is limited to the rice (both cooked and raw rice). even though have added urad dal it is very minimal. adding urad helps to hasten the fermentation process and hence i have added it. secondly, the cooked rice not only helps to improve the consistency of the dosa batter but also helps to get the sourness to the batter. in addition, if you noticed the consistency of the dosa batter is very similar to the neer dosa. this helps to spread the dosa easily and also get the porous texture to the dosa when it is cooked. this makes it more interesting and appetising especially when served with spicy curry.

furthermore, some more additional tips, suggestions and variants to the leftover rice dosa. firstly, the same recipe is prepared in kerala with additional ingredients like yeast or toddy liquor. this helps to hasten the fermentation process and you may not require to ferment it overnight. secondly, there is no specific type of cooked rice for this dosa recipe. i have used raw dosa rice and mixed it with sona masuri cooked rice. having said that, it has to be cooked well before it is used. lastly, i have used a normal cast iron-based dosa pan to cook this dosa. you may use it or you can also use a non-stick pan or even an appam pan to cook this soft dosa.

Ingredients
 

for dosa batter:

  • 3 cup dosa rice
  • ¼ cup urad dal
  • ½ tsp methi
  • water (for soaking)
  • cup cooked rice
  • 1 tsp salt

for spicy tomato chutney:

  • 3 tsp oil
  • 1 tbsp chana dal
  • 4 dried red chilli
  • 3 shallot (chopped)
  • 1 clove garlic
  • 1 tomato (chopped)
  • small piece tamarind
  • ½ tsp salt
  • water (for grinding)

Instructions
 

how to make soft dosa using leftover rice:

  • firstly, in a large bowl take 3 cup dosa rice, ¼ cup urad dal and ½ tsp methi.
  • rinse with water and soak for 4 hours.
  • drain off the water and grind to a smooth paste.
  • transfer the batter to a large vessel.
  • now take 1½ cup cooked rice and blend to smooth paste adding water as required.
  • transfer the rice paste to the same vessel.
  • mix well making sure everything is well combined.
  • allow fermenting for 8 hours or until the batter doubles.
  • mix the batter slightly, and then add 1 tsp salt.
  • mix well making sure the batter is well combined.
  • now pour the batter on hot dosa tawa and spread slightly.
  • cook on medium flame until the dosa is cooked well. you can also cover and cook to hasten the cooking process.
  • finally, enjoy cooked rice dosa with spicy tomato chutney.

how to make spicy tomato chutney:

  • firstly, in a pan heat 3 tsp oil, add 1 tbsp chana dal and 4 dried red chilli.
  • roast on low flame until the dal turns crunchy.
  • add 3 shallot, 1 clove garlic and saute until the onions shrink slightly.
  • further, add 1 tomato and saute until the tomato softens slightly.
  • cool completely, and transfer to the mixer jar.
  • add a small piece of tamarind and ½ tsp salt.
  • grind to smooth paste adding water as required.
  • now pour the tempering over the chutney and mix well.
  • finally, enjoy spicy tomato onion chutney with idli and dosa.

  • firstly, make sure to ferment the dough really well. else the dosa will not have holes.
  • also, for an instant version, you can use eno, soda or yeast to the batter.
  • additionally, the dosa can also be poured like set dosa.
  • finally, cooked rice dosa recipe tastes great when served with spicy chutney.
