puri recipe for pani puri | golgappa puri recipe for pani puri with detailed photo and video recipe. a tiny, hollow, crispy poori served with most of the indian street foods and especially with pani puri recipe.
puri for pani puripuri recipe for pani puri | golgappa puri recipe for pani puri with step by step photo and video recipe. basically a small crispy poori served with most of the indian chaat recipes or fast food recipes. ideally, pooris are prepared for the pani puri recipe. however, due to its crispy and subtle flavour, it is included in most of the chaat recipes. moreover, without any stuffing puri’s does not have any particular taste. but when served with other chaat recipes, it will burst with flavours of taste.

while most of street vendors, prepare golgappa puris with just semolina. however i have used a tsp of maida with semolina to prepare this crisp puris. adding plain flour ensures the puris to be more crisp and attractive. however, if you want your puris to be crisp for longer time, than skip adding plain flour. while adding maida may give a beautiful colour to puri’s. but your puris may turn chewy after 30 mins or so. hence, thumb rule is to serve the puri’s immediately once prepared.

furthermore, like my most of the indian street food recipe, even pani puri recipe is shared by my uncle. i think i had mentioned about him in my previous post of bhel puri recipe. he live is in mumbai near juhu beach. i have even heard a lot of stories about juhu beach and its offering on street food from my husband. i have tried several chaat recipes from him and are always amazing. he prepares puri’s by adding a pinch of baking soda. however i have skipped it totally to make it more healthy.

Serves: 10-15 puris
Ingredients
  • ½ cup semolina / rava / bombay rava / sooji
  • 1 tsp maida / plain-flour / all-purpose flour
  • salt to taste
  • water as required to knead
Instructions ( 1 cup =255 ml)
  1. firstly, in a large mixing bowl take rava.
  2. furthermore, add maida to it. this helps to bond the dough well.
  3. also add salt to taste and mix well.
  4. now add water little by little and start to knead.
  5. prepare a soft dough by kneading for atleast 5 minutes.
  6. furthermore, rest for 15 minutes covering with moist cloth. so that rava absorbs water.
  7. now roll the dough as tin as possible using rolling pin.
  8. further, take a small cup and start to make small puris.
  9. also heat oil in a deep frying pan or kadai. when the oil is sufficiently hot, add prepared puri and press with the spoon to puff up.
  10. once they puff, it will automatically turn over. if not, once the bottom side is golden brown, turn over the puri.
  11. and fry the puri till golden brown and crisp.
  12. remove the puri into tissue paper to remove excess oil. fry all pooris same way.
  13. finally, puri is ready to prepare pani puri.

notes:

  • firstly, knead the dough well else puri will not be crispy.
  • also add very little amount of maida as semolina makes puri crispy.
  • furthermore, deep fry the puris till they are crispy.
  • finally, store the puris is airtight container and use as required to prepare chaats.
