furthermore, i would also like to add some additional tips, suggestions and variations to the leftover rice idli recipe. firstly, you may use any type of cooked rice for this recipe and there is no hard and fast rule for it. however, try to use soft rice which fully cooked under steam so that it can be easily mashed. secondly, sour curd or yoghurt is mandatory for this recipe and avoid preparing this recipe if you do not have it. also, store-bought yoghurt can be used, but before using it keep it outside the fridge so that it develops sourness through heat. lastly, the final idli’s may not be the same as traditional idli in terms of texture and softness. also, due to the cooked rice, it may turn chewy, but still an ideal alternative.

Ingredients
- 1½ cup cooked rice, leftover
- 1 cup rava / semolina / suji, coarse
- 1 cup water
- 1 cup curd
- ½ tsp salt
- ½ tsp eno fruit salt
Instructions
- firstly, in a blender take 1½ cup cooked rice and add 1 cup water.
- blend to smooth paste.
- transfer the rice batter to a large bowl. keep aside.
- in a pan dry roast 1 cup rava. roast on low flame until it turns aromatic.
- cool completely, and transfer to the same bowl.
- also, add 1 cup curd, ½ tsp salt and mix well.
- beat for 3 minutes until the batter turns light.
- cover and rest for 20 minutes or until the rava absorb well.
- now add water as required to adjust the consistency of the batter.
- further, just before steaming, add ½ tsp eno fruit salt and mix gently.
- mix until the batter turns frothy.
- now pour the idli batter into the greased plate. make sure to grease the plate before in hand.
- steam the idli on a medium flame for 13 minutes.
- finally, enjoy instant leftover rice idli with onion chutney.

notes:
- firstly, make sure to roast the rava else there are chances for idli to turn sticky.
- also, you can use idli rava in place of bombay rava. however, you need to increase the soaking time.
- additionally, the same batter can be fermented overnight and skip adding eno.
- finally, instant leftover rice idli recipe can also be prepared with freshly cooked rice.
