well almost everyone has faced this challenge! early morning during, the rush hour time and you may have forgotten to prep for morning breakfast. or perhaps you may get a sudden requirement or request to make soft and puffy idli and you do not have the batter ready. previously i used to get stressed whenever i face such situations, but now i have a solution to it. it is one of the simplest and easy idli recipe made with poha and idli rice. it hardly takes minutes to prepare the batter and in no time soft idli’s are ready. moreover, it does not require any fancy ingredients and can be done with basic ingredients available in almost all the indian kitchen. you may serve these idli’s with spicy coconut chutney or with a choice of sambar as it just melts in your mouth.

furthermore, some more additional tips, suggestions and variants to the aval idli recipe. firstly, i have used thin poha which is easy to use and get dissolved when mixed with moisture or curd. you may also use thick or medium poha, but you may need to soak in and ground it in a mixer grinder. secondly, i would heavily recommend using sour curd or yoghurt which not only adds the sour taste to the idli but also helps to hasten the fermentation reaction. if you do not have it, you may add 2-3 tsp of lemon juice to make it sour. lastly, with this post, i have shown how to make a mint and coriander coconut chutney. i feel this combination is ideal, to begin with, but you may select any choice of spicy chutney or sambar to go with. with chutney, i would heavily recommend using watery chutney so that it can be easily consumed.

Ingredients
  

  • 1 cup poha / aval / avalakki / atukulu / flattened rice, thick
  • 1 cup curd
  • cup rice rava / idli rava
  • ¾ tsp salt
  • 2 cup water, as required
  • ¾ tsp eno / fruit salt

Instructions
 

  • firstly, in a small mixi grind 1 cup poha to a coarse powder. i have used thick variety poha, if you are using thin then increase the quantity of poha.
  • add 1 cup curd and mix well. make sure to poha absorbs curd.
  • further, add 1½ cup rice rava and mix well. you can alternatively, use upma rava and mix well.
  • now add ¾ tsp salt and 1 cup water.
  • mix well making sure everything is well combined adding water as required.
  • cover and rest for 30 minutes or until the rava and poha absorb water.
  • after 30 minutes, mix gently, making sure the rava has absorbed water.
  • now add ½ cup water and mix well adjusting the consistency.
  • just before steaming, add ¾ tsp eno and mix gently until the batter turns frothy.
  • now pour the batter into greased idli plate.
  • steam the idli for 15 minutes or until the idli is cooked well.
  • finally, enjoy poha idli with coriander mint chutney.

notes:

  • firstly, make sure to soak well else the idli will turn dry and not soft.
  • also, instead of idli rava you can use upma rava.
  • additionally, the eno can be replaced with ¼ tsp soda.
  • finally, instant poha idli recipe tastes great when prepared soft and spongy.
