well, if you have noticed my previous paal cake recipe, this recipe of button sweet is very much inspired by it. the combination of wheat flour and milk powder used in this recipe is similar to the maida and milk powder used in paal cake. in both the recipes, it is later dipped in sugar syrup which makes it soft and more importantly gets the sweet taste. while the addition of sugar syrup was my twist, but generally these kinds of sweets snacks are made by adding sugar directly to the dough. adding sugar syrup, makes it attractive, softer as compared to adding sugar to the dough. i like my sweets snacks to be softer but not like gulab jamun extra soft so i added a mild sugar syrup as a topping to this sweet snack.

furthermore, some more additional tips, suggestions, and variants to the button sweet recipe. firstly, this sweet recipe is dedicated and prepared with wheat flour, but you can also use maida or plain flour too. you may use the 1:1 ratio for this recipe which should make the sweet softer and lighter. secondly, the shape of the sweet is not significant to the sweet and you may shape it as per your preference. perhaps, you can shape like barfi or even like a kaju using the same bottle cap. you may check my kaju namak pare for the shape. lastly, once the sweet is prepared, you may either keep and soak it in sugar syrup or store it without it. keeping in sugar syrup will keep the sweet softer, whereas, without it, it will be crispier.

Ingredients
  

for button preparation:

  • cup wheat flour
  • 1 cup milk powder, unsweetened
  • ½ tsp baking powder
  • 1 tbsp ghee / clarified butter
  • warm milk, for kneading
  • oil, for frying

for sugar syrup:

  • 2 cup sugar
  • 3 pods cardamom
  • 2 cup water

Instructions
 

  • firstly, in a large bowl take 1½ cup wheat flour, 1 cup milk powder and ½ tsp baking powder.
  • add 1 tbsp ghee and mix forming a moist flour.
  • add ½ cup warm milk and start to knead.
  • knead to a smooth and soft dough adding milk as required.
  • roll the dough to a slightly thick thickness.
  • now cut into small circles using a cap of the bottle.
  • drop into hot oil and fry on low flame.
  • stir occasionally and fry until it turns golden brown.
  • drain off the pieces to remove excess oil. keep aside.
  • in a large vessel take 2 cup sugar, 3 pods cardamom, and 2 cup water.
  • stir and boil for 2 minutes or until the sugar syrup turns sticky. do not attain 1 string consistency.
  • now pour hot sugar syrup over the fried pieces.
  • dip completely, and allow to soak for 2 hours or until the pieces absorb the sugar syrup.
  • finally, enjoy button sweet or wheat sweet garnished with chopped nuts.

notes:

  • firstly, make sure to fry on low flame, else the buttons will remain uncooked from inside.
  • additionally, for rich flavour, you can add kesar in sugar syrup.
  • also, in place of wheat flour, you can use maida as a variation.
  • finally, button sweet or wheat sweet tastes great for a week when refrigerated.
