well many who are familiar with besan barfi, would argue that this recipe is exactly like the barfi with a different shape to it. technically it is not a barfi, but from a colour and taste perspective, i would agree with it. basically, it made with a mixture of milk powder and chickpea flour which gives it a soft and moist texture to the peda. whereas in the barfi recipe, sugar syrup is prepared and the besan flour (milk powder optional) is added directly to it. sugar syrup gives the required barfi semi-solid texture and hence technically both the recipes are different. in other words, besan milk powder peda is one of the easy and simple besan sweets prepared ever. no sugar syrup, just mix the sugar to besan and milk powder and your peda is ready in no time.

furthermore, i would also like to add some additional tips, suggestions and variants to the besan peda recipe. firstly, besan is the key ingredient for this recipe. it has to be fresh, smooth and i have used besan powder used for laddu which easily gets mixed and also can be easily shaped. secondly, in the place of milk powder, you may also use khoya/mawa or a combination of both to make it even more creamy. yet, do not forget the ratio of each ingredient and try to follow the same proportion. lastly, depending upon the moisture level in the final besan mixture, you may have to freeze it accordingly in the refrigerator. basically, if you feel it soft extend the freezing time.

Ingredients
  

  • ¼ cup ghee
  • 1 cup besan / gram flour
  • ¼ cup milk powder
  • ½ cup coconut, grated
  • 1 cup milk
  • ¾ cup sugar

Instructions
 

  • firstly, in a large kadai take ¼ cup ghee and 1 cup besan.
  • roast on low flame until the besan turns aromatic.
  • after 15 minutes of continuous roasting, the besan starts to turn golden brown.
  • now add 1 tsp ghee and continue to roast.
  • the ghee will start to release at this stage indicating the besan is cooked completely.
  • now add ¼ cup milk powder and ½ cup coconut.
  • roast for 2 minutes, or until everything is well combined.
  • further, add 1 cup milk and mix well breaking the lumps.
  • the mixture starts to thicken absorbing the milk. cook until the mixture starts to hold the shape.
  • now add ¾ cup sugar and mix well.
  • sugar dissolves, continue to cook for 5 minutes more making sure it holds the shape.
  • also, add 1 tsp ghee to get the glossy smooth look.
  • when the mixture is still warm, take a ball sized peda mixture and shape.
  • also using a peda design mould, design to your choice.
  • refrigerate the peda for 1 hour before serving.
  • finally, enjoy besan peda garnished with nuts if required.

  • firstly, make sure to roast the besan on a really low flame, else there are chances for besan to burn.
  • also, you can increase the amount of ghee to make it rich and tasty.
  • additionally, adding milk powder and coconut will enhance the flavour of peda.
  • finally, besan peda recipe tastes great for a week when refrigerated in an airtight container.
