as i was explaining earlier, this is one of the simple dessert or barfi recipes. it is basically prepared with just 3 ingredients. in other words the barfi base is set up with just milk powder and sugar syrup which is later topped with tutti frutti toppings. the best part of the sweet is the combination of milk powder and sugar syrup, but the tutti frutti toppings make it beautiful and attractive. in addition, the tutti frutti adds the crunchy sweet taste to the barfi, taking it to another level. technically, you may add any type of dry fruits or raisin as an alternative to the tutti frutti. but because it is tutti frutti barfi, it is better to stick to it.

furthermore, i would also like to add some additional tips, suggestions, and variants to the tutti frutti burfi recipe. firstly, the sugar syrup is optional and you may just melt the sugar and mix it with milk powder. however, sugar syrup gives the shape and crunchiness to the sweet and is hence highly recommended. secondly, the shape of the barfi can be experimented with as per your choice. you may also roll it to cylindrical and slice it like a pinwheel. lastly, because of the sugar syrup use, it has a longer shelf life. yet you need to store it in a dry container for a longer and better shelf life.

Ingredients
 

  • 3 cup milk powder (unsweetened)
  • ½ cup ghee
  • 1 cup sugar
  • ¾ cup water
  • 1 tsp vanilla extract
  • ¼ cup tutti frutti

Instructions
 

  • firstly, in a large bowl take 3 cups of milk powder. i have used unsweetened full cream milk powder.
  • add ½ cup ghee and mix well using a spoon. mix gently making sure there are no lumps in the mixture. keep aside.
  • in a large kadai take 1 cup sugar and ¾ cup water.
  • stir well until the sugar dissolves completely.
  • continue to boil till the 1 string consistency of sugar syrup is attained.
  • now keeping the flame on low, add milk powder mixture.
  • keep stirring until the milk powder is well combined in sugar syrup.
  • continue to cook on low flame until the mixture turns silky smooth consistency.
  • further, add 1 tsp vanilla extract and ¼ cup tutti frutti.
  • mix well until the mixture starts to hold the shape and separates the pan. you can also check by making a small ball and it is perfect if the mixture is non-sticky and holds shape.
  • now transfer the mixture into the tray lined with baking paper.
  • top with 4 tbsp tutti frutti and press to level it up.
  • rest for 1 hour or until it cools completely.
  • now cut into pieces and ready to serve.
  • finally, enjoy tutti frutti burfi for a week when stored in the refrigerator.

notes:

  • firstly, sugar syrup consistency should be exact 1 string. if it is more then burfi will be hard. and if it is less then the burfi will be chewy and sticky.
  • also, you can increase the amount of sugar if you are a sweet person. however, this is the perfect sweetness for these measurements.
  • additionally, top with cherry along with tutti frutti to look attractive.
  • finally, tutti frutti burfi recipe tastes great as it is flavored with vanilla extract.
