soya chunks kurma recipe | meal maker kurma curry | soya bean kurma with detailed photo and video recipe. an indian curry recipe prepared mainly with coconut and cashew based gravy with soya chunks or soya beans as main ingredient. soya bean recipes are always protein-rich recipes and even this kurma is filled with it. it is an ideal curry recipe which can not only be used for dinner or lunch with chapathi or roti but also for breakfast with poori’s.
there are several variation to kurma recipe in indian cuisine. basically the 2 main variation is the north indian and south indian variation to this recipe. the basic difference between these 2 variation is the usage of coconut paste in the south indian variation. the north indian variation is without it and is mainly prepared with just cashew and yogurt base. having said that, even in south indian variation there are several variation and with the usage of ingredients like roasted chana dal, cashews and curd. however for this recipe of soya chunks kurma i have prepared it very similar to my previous mixed veg kurma.
while the recipe for soya chunks kurma recipe is extremely simple, yet some tips and recommendations for it. firstly, in this recipe i have used only soya chunks as its main ingredient. but it can be easily extended by adding other veggies like carrot, potato, peas and cauliflower to prepare mixed veg soya kurma. secondly, addition of roasted chana dal is optional and can be ignored if you do not have it or you do not like it. similarly addition of curd is optional and i have skipped in this recipe. lastly, i have used green chillies which yields a green coloured kurma but if you need red one, than use dry red chillies as alternative to it.

Ingredients
for cooking soya chunks:
- 5 cups water
- 1½ cup soya chunks
- ½ tsp salt
for masala paste:
- ½ cup coconut, fresh/desiccated
- 15 whole cashew / kaju
- 1 tsp putani / roasted gram dal
- 2 whole green chilli
- ½ tsp fennel / saunf
- 1 tsp coriander seeds
- 2 tsp poppy seeds / khus khus
- handful coriander leaves
- ½ cup water
for kurma:
- 3 tsp oil
- 1 tsp cumin / jeera
- 3 cloves / lavang
- 1 inch cinnamon / dalchini
- 2 pods cardamom / elachi
- 1 onion, finely chopped
- 1 tsp ginger garlic paste
- ½ tsp salt
- 1 cup tomato, finely chopped
- ½ cup water
Instructions
- firstly, prepare masala paste by taking ½ cup coconut, 15 whole cashew, 1 tsp putani and 2 whole green chilli.
- also add ½ tsp fennel, 1 tsp coriander seeds, 2 tsp poppy seeds and handful coriander leaves.
- blend to a smooth paste adding ½ cup water or as required. keep aside.
- to prepare kurma, heat a kadai with 3 tsp oil and saute spices.
- also, saute 1 onion followed by 1 tsp ginger garlic paste.
- additionally, add 1 cup tomato, and saute till they turn soft and mushy.
- add squeezed soya and ½ tsp salt.
- saute for a minute or till soya combines well with the masala.
- now add the prepared masala paste and mix well.
- add ½ cup water or more adjusting consistency as required.
- cover and simmer for 10 minutes or till masala get cooked completely.
- finally, serve soya chunks kurma with rice or chapathi.
how to make soya chunks kurma with step by step photo:
- firstly, heat 5 cups water and boil 1½ cup soya chunks with ½ tsp salt for 8 minutes or till soya turns soft.
- once the soya is cooked drain off the water and transfer to a bowl of cold water and rest for 10 minutes.
- further, squeeze off the soya chunks to remove the absorbed water and keep aside. make sure to squeeze water else they won’t absorb masala.
- now prepare masala paste by taking ½ cup coconut, 15 whole cashew, 1 tsp putani and 2 whole green chilli.
- also add ½ tsp fennel, 1 tsp coriander seeds, 2 tsp poppy seeds and handful coriander leaves.
- blend to a smooth paste adding ½ cup water or as required. keep aside.
- to prepare kurma, heat a kadai with 3 tsp oil and saute 1 tsp cumin, 3 cloves, 1-inch cinnamon and 2 pods cardamom till they turn aromatic.
- also, saute 1 onion followed by 1 tsp ginger garlic paste.
- additionally, add 1 cup tomato, and saute till they turn soft and mushy.
- add squeezed soya and ½ tsp salt.
- saute for a minute or till soya combines well with the masala.
- now add the prepared masala paste and mix well.
- add ½ cup water or more adjusting consistency as required.
- cover and simmer for 10 minutes or till masala get cooked completely.
- finally, serve soya chunks kurma with rice or chapathi.
notes:
- firstly, make sure to cook soya well and squeeze off the water. else they might be causing indigestion and smell bad as they are rich in protein.
- furthermore, cook the kurma well to avoid the raw smell of coconut in kurma.
- additionally, add a tbsp of milk while cooking soya to remove the smell from soya chunks.
- finally, squeeze off the water from soya chunks before adding to soya chunks kurma.
Can we use dry coconut in this recipe?if we use dry coconut does the taste gets spoiled??
you can use dry coconut… however kurma taste great with fresh coconut.
