cabbage rice recipe | cabbage pulao recipe | spicy cabbage pulav with detailed photo and video recipe. an easy and healthy lunch box recipe prepared mainly with cooked rice and shredded cabbage leaves. it is an ideal recipe if you have some leftover rice with some unattended cabbage in your fridge, resulting in a spicy flavoured rice recipe. it tastes great when served with the combination of raita or salad for lunch or dinner.
in this recipe post of cabbage rice, i have prepared it very similar to my previous peanut rice recipe. thus giving a south indian touch to this classical rice recipe and hence i call this recipe as cabbage pulao. the other common way of preparing the cabbage rice is similar to popular indo chinese fried rice recipe. as a matter of fact, it is one of the most common varieties found on indo chinese restaurants menu. perhaps i will release it soon with a video but this post is purely a south indian flavoured cabbage rice recipe.
the recipe for cabbage rice is extremely simple to prepare, yet some tips, recommendations and serving ideas. firstly, you can use any types of cabbage for this rice recipe. i personally prefer the greenish white cabbage but the purple or red cabbage should also work. secondly, i would heavily recommend using dry rice or leftover rice to prepare this recipe. freshly prepared steam rice may contain moisture and hence the end result may be sticky and may reduce the spice and taste level. also, you can use both sona masuri or basmati rice for cabbage pulao. lastly, the rice should taste ideal when served by itself or with raita. but tastes amazing when served with peanut chutney or mirchi ka salan curry too.

Ingredients
- 3 tsp oil
- ¾ tsp mustard seeds
- 1 tsp cumin / jeera
- few curry leaves
- 2 tbsp peanuts
- 1 green chilli, slit
- ½ onion, finely chopped
- ¼ carrot, grated
- 2 tbsp capsicum, finely chopped
- 2 cup cabbage, finely chopped
- ½ tsp salt
- ¼ tsp turmeric / haldi
- ½ tsp kashmiri red chilli powder / lal mirch powder
- ½ tsp garam masala
- 2 cup cooked rice
- 2 tbsp coconut, grated
- few coriander leaves, finely chopped
Instructions
- firstly, in a large kadai heat 3 tsp oil and splutter ¾ tsp mustard seeds, 1 tsp cumin and few curry leaves.
- also, saute 2 tbsp peanuts until it turns crunchy on low flame.
- additionally, saute 1 green chilli and ½ onion until the onions turn translucent.
- furthermore, add ¼ grated carrot and 2 tbsp capsicum. saute and cook well.
- now add 2 cups finely chopped cabbage, ¼ tsp salt and saute 3 minutes or until it cooks well.
- also add ¼ tsp turmeric, ½ tsp chilli powder and ½ tsp garam masala. saute on low flame till spices turn aromatic.
- furthermore, add 2 cups cooked rice, ¼ tsp salt and mix gently.
- cover and simmer for 3 minutes or till rice absorb spices.
- now add 2 tbsp coconut and few coriander leaves. mix well.
- finally, serve cabbage rice with raita or pack to your kid's lunch box.
how to make cabbage rice with step by step photo:

- firstly, use leftover rice for the more rich flavour to the rice.
- also, add cashew in place of peanuts to make rice tastier.
- additionally, add vegetables of your choice along with capsicum and carrot to make it more nutritious.
- finally, cabbage rice tastes great when garnished with fresh coconut.
