Coriander Rice Recipe | Cilantro Rice | Coriander Pulao or Kothamalli Rice with detailed photo and video recipe. An authentic South Indian flavoured rice recipe filled with veggies and infused with fresh coriander aroma. In South India, coriander pulao is mainly prepared for breakfast but can also be an ideal lunch or tiffin box. It tastes great without any side dish, but it can also be served with any basic raita or kurma recipe.
The recipe for coriander rice is very simple and is generally prepared with the leftover rice from the previous day. I have used fresh coriander leaves grounded with other dry spices to prepare the fresh and green masala paste. It is later mixed with a choice of finely chopped vegetables in a cooking pan to prepare a vegetable pulao base. Once the base with vegetables is thoroughly cooked, it is then mixed with leftover rice. Ensure the masala is infused with the vegetables and the rice. Having said that, you can also prepare it in a pressure cooker without the hassle of mixing and sauteing. Once the masala paste is ready, sautee it for 4-5 minutes and then mix it with soaked rice. Close the lid and pressure cook it with a 1:2 rice-to-water ratio.
Furthermore, some important tips and suggestions while preparing the simple coriander rice recipe. Firstly, in this recipe I have used only fresh green coriander leaves herb for the masala paste. But you can easily experiment by adding an equal amount of pudina or mint leaves with coriander. Secondly, as I mentioned previously, adding vegetables is open-ended and you can add a choice of vegetables. I would recommend you add finely chopped veggies so that it gets cooked evenly. Lastly, if you are planning to add cooked rice, ensure it is completely moisture free with no moisture. Ideally, leftover rice is best suited, but you can also manually dry the freshly prepared rice before using it.

It is perhaps one of the simple and flavoured rice recipes made with a combination of vegetables and fresh coriander leaves masala paste. Coriander Rice most commonly known as Coriander Pulao is a favourite, South Indian breakfast Meal served with thin and watery yoghurt raita. Yet not limited to it and it can be the perfect lunch and tiffin box recipe for both adults and kids.
There are many different ways to make this simple Coriander Rice, but the most common way is to make it with just rice and fresh coriander leaves. The other most common way is to add a combination of mint and coriander leaves. The recipe may not have the full aroma of dhania leaves but the combination makes it more complete. Also, adding pulao masala powder with the green masala paste, makes it more aromatic and spicy.

Ingredients
for masala paste:
- ยฝ onion, cubed
- 8 cloves / lavang
- ยฝ tsp pepper
- 1 inch cinnamon
- 2 green chilli
- handful coriander
other ingredients:
- 1 tbsp ghee / clarified butter
- 1 bay leaf / tej patta
- 13 whole cashew / kaju
- ยฝ onion, sliced
- 1 tsp ginger garlic paste
- ยฝ tomato, finely chopped
- 5 beans, chopped
- ยผ carrot, chopped
- ยผ capsicum, chopped
- 2 tbsp peas / matar
- 1 tsp salt
- 3 cup cooked rice
Instructions
- firstly, in a small blender take ยฝ onion,ย 8 cloves, ยฝ tsp pepper, 1 inch cinnamon, 2 green chilli and handful coriander leaves.
- blend to smooth paste adding 2 tbsp of water or as required. keep aside.
- in a large kadai, heat 1 tbspย gheeย and roastย 1 bay leaf and 13 whole cashew.
- also sauteย ยฝ sliced onion followed by 1 tsp ginger garlic paste till the raw smell disappears.
- now addย ยฝ tomato and saute till the tomatoes turn soft and mushy.
- additionally, addย 5 beans, ยผ carrot,ย ยผ capsicum, 2 tbsp peas and saute for a minute.
- add in prepared masala paste along with 1 tsp of salt. mix well.
- cover and cook for 5 minutes, or till vegetables get cooked completely.
- now add in 3 cups of cooked rice and mix gently.
- cover and simmer for 5 minutes to absorb all masala.
- finally, serve coriander rice / coriander pulav with raita of your choice.
