i have shared quite a few pulao recipes till now, but sweet corn pulao recipe is my new favourite recipe. i like this dish, not just for the taste of it but also for its effortlessness and its beautiful aroma. like any other pulao recipes, even the corn pulao requires the same dry spices. yet the addition of sweet corn gives it a unique flavour and dimension to this simple pulav recipe. moreover, corn pulao can be served by itself without any side dish, but my personal favourite combination is with veg sagu or veg kurma. the discovery of this combination was serendipity.
furthermore some easy tips and recommendations for a flavourful sweet corn pulao recipe. firstly, soak the rice for atleast 20-30 minutes to get separate grains of rice even after cooking. also add vegetables like carrot, paneer and capsicum along with corn to make it more attractive and nutritious. lastly, replace milk with coconut milk for more flavours or just add 2 cups of water.

Ingredients
- 2 tbsp ghee / clarified butter
- 1 bay leaf / tej patta
- 1 star anise
- 5 cloves / lavang
- 1 inch cinnamon / dalchini
- 1 tsp pepper
- 2 green chilli (slit)
- 1 tsp jeera / cumin
- 1 onion (finely chopped)
- ½ capsicum (chopped)
- 1 tsp ginger-garlic paste
- ¾ cup corn (fresh / frozen)
- ½ tsp garam masala
- 1 tsp salt
- 1 cup basmati rice (soaked 30 minutes)
- 2 tbsp coriander (finely chopped)
- 1 cup milk
- 1 cup water
Instructions
- firstly, in a pressure cooker heat 2 tbsp ghee and saute spices.
- further add 1 onion and saute well.
- additionally add 2 green chilli and 1 tsp ginger-garlic paste. saute well.
- furthermore add ½ chopped capsicum and ¾ cup corn. saute for a minute.
- now add ½ tsp garam masala and 1 tsp salt. saute slightly.
- add 1 cup basmati rice. make sure to soak for 20-30 minutes.
- saute for a minute without breaking rice grains.
- further add 1 cup milk and 1 cup water.
- pressure cook for 2 whistles on medium flame.
- additionally add 2 tbsp coriander and mix gently.
- finally, serve corn pulao with raita or veg sagu.
how to make corn pulao with step by step photo:
- firstly, in a pressure cooker heat 2 tbsp ghee. alternatively, use oil instead of ghee.
- further add 1 bay leaf, 1 star anise, 5 cloves, 1 inch cinnamon, 1 tsp pepper and 1 tsp jeera.
- saute till the spices turn aromatic.
- further add 1 onion and saute well.
- additionally add 2 green chilli and 1 tsp ginger-garlic paste. saute well.
- furthermore add ½ chopped capsicum and ¾ cup corn. saute for a minute.
- now add ½ tsp garam masala and 1 tsp salt. saute slightly.
- add 1 cup basmati rice. make sure to soak for 20-30 minutes.
- saute for a minute without breaking rice grains.
- further add 1 cup milk and 1 cup water. milk helps to give more flavour, however you can replace with water or coconut milk.
- pressure cook for 2 whistles on medium flame. if cooking in open pan, then cover and simmer for 20 minutes or till water is evaporated completely.
- additionally add 2 tbsp coriander and mix gently.
- finally, serve corn pulao with raita or veg sagu.
notes:
- firstly, add tomato to make slightly tangy corn pulao recipe.
- also, add vegetables of your choice to make pulao more healthy and nutritious.
- additionally, adjust the quantity of green chilli depending on the spice level.
- finally, to prepare perfect corn pulao always use good quality basmati rice.
if I wish to make double the quantity of pulav i.e. 2 cups worth basmati rice, would it be okay if I directly double all the ingredients?
