well, to be honest, the kichu dish is not something a treat to the eye. as the recipe process includes rice flour and steaming, the end product looks like a lump. but the taste and health benefits is something to be considered. moreover, it can be easily digested as it is made by steaming and just with rice flour. having said that it can be pale and tasteless for many as it does not have much spice in it. therefore, it is added or topped with indian pickle masala to spice it up before serving. in addition to it, it is also topped with a generous amount of peanut oil or ghee to make it even more flavoured. i personally like this recipe and i make it more often for my breakfast as it supplies the required carbs and vitals for early morning.

furthermore some easy and important tips and suggestions for a perfect and tasty khichu recipe or papdi no lot. firstly, in this recipe, i have added fine rice flour which brings it a proper consistency and texture. but you can also make it with coarse but you may need to stir it continuously to get the right consistency. secondly, the dish has to be served immediately once it is removed from stove. you may have to add or sprinkle some water to bring it to the right consistency. lastly, you can top it with dry fruits just before serving. i personally like it to be simple but it is completely open-ended.

Ingredients
  

  • cup water
  • 1 chilli, finely chopped
  • 1 tsp cumin / jeera
  • ¼ tsp ajwain / carom seeds
  • ¼ tsp baking soda
  • 1 tsp salt
  • 1 cup rice flour
  • peanut oil for serving
  • pickle masala for serving

Instructions
 

  • firstly, in a large kadai take 2½ cup water.
  • add 1 chilli, 1 tsp cumin, ¼ tsp ajwain, ¼ tsp baking soda and 1 tsp salt. traditionally, papad khar is added in place of baking soda.
  • mix well and get water to boil for 3 minutes.
  • further, add 1 cup rice flour and stir well.
  • stir continuously until the rice flour absorbs all the water.
  • break the lumps and form a soft and fluffy mixture.
  • cover and simmer for 6 minutes or until rice flour are cooked completely.
  • finally, enjoy khichu topped with peanut oil and pickle masala.

notes:

  • firstly, stir well to prevent from lump formation.
  • also, adding coriander leaves to water will enhance the flavour of khichu.
