well as i was explaining earlier, aloo fry recipe is one generic recipe and there are myriad ways it can be prepared. each region and state of india has its own way to prepare this basic aloo fry. having said that, i have tried to accumulate the 3 most popular across all the regions. the first one is the classic south indian fry where the potatoes are fried with just oil and seasoned with salt and chilli powder later. this is the simplest out of all and carries the same texture as potato fries. the second one is very similar to the first one but has more spices like cumin and curry leaves. in addition, it is cooked by frying and steaming. the last one is the masaledar or spicy aloo fry recipe. this recipe is an ideal roti or chapati based side dish recipe. you may also serve it to rice and dal combo too.

furthermore, i would also like to add some additional tips, suggestions and variants to alu fry recipe. firstly, the shape of diced or sliced potatoes is not critical for any of these recipes. you may shape it as per your choice and preference for any of these recipes. also, try to make it thin or small cubes to hasten the cooking process. secondly, as the recipe only takes few minutes to prepare these recipes, i would recommend preparing it when you are about to serve it. because once it is rested it may lose its crispiness and shape. lastly, these side dish recipes are not limited to just rice and roti dishes. you may serve it as a simple snack or even as chaat recipe.

Ingredients
  

for crispy aloo fry:

  • 2 tbsp oil
  • 4 potato / aloo, cubed
  • ¾ tsp chilli powder
  • ½ tsp salt

for chatpate aloo fry:

  • 2 tbsp oil
  • 1 tsp cumin
  • pinch hing
  • 2 chilli, finely chopped
  • few curry leaves
  • 4 aloo / potato, chopped
  • ½ tsp salt
  • ¼ tsp turmeric
  • 2 tbsp coriander, finely chopped

masaledar aloo fry:

  • 2 tbsp oil
  • 1 tsp cumin
  • 1 dried red chilli
  • pinch hing
  • ½ onion, finely chopped
  • 1 tsp ginger garlic paste
  • 4 aloo / potato, sliced
  • ½ tsp salt
  • 2 tbsp water
  • ¼ tsp turmeric
  • ¾ tsp chilli powder
  • ½ tsp cumin powder
  • ½ tsp garam masala
  • ½ tsp aamchur
  • 2 tbsp coriander, finely chopped

Instructions
 

how to make crispy aloo fry:

  • firstly, in a large kadai heat 2 tbsp oil.
  • add 4 potato and mix well making sure the oil is coated well. make sure to cut the aloo on equal sizes and rinse well.
  • stir occasionally, and fry on medium flame.
  • spread the aloo over the kadai making sure the base is roasted well.
  • once the base turns golden brown, give a stir.
  • fry on medium flame until the aloo turns golden brown and crisp.
  • now add ¾ tsp chilli powder and ½ tsp salt. mix well.
  • finally, enjoy crispy aloo fry with hot steamed rice or as a side dish with rasam.

how to make chatpate aloo fry:

  • firstly, in a large kadai heat 2 tbsp oil.
  • add 1 tsp cumin, pinch hing, 2 chilli and few curry leaves.
  • splutter the tempering without burning.
  • add 4 aloo, ½ tsp salt and fry for a minute. make sure to cut the aloo on equal sizes and rinse well.
  • now add ¼ tsp turmeric and mix well.
  • cover and cook on low flame for 10 minutes or until the aloo is cooked well.
  • oven the kadai and roast for a minute, giving a crunchy texture.
  • also, add 2 tbsp coriander and mix well.
  • finally, enjoy chatpate aloo fry with roti or as a side dish with rasam.

how to make masaledar aloo fry:

  • firstly, in a large kadai heat 2 tbsp oil.
  • add 1 tsp cumin, 1 dried red chilli, pinch hing and saute until the spices turn aromatic.
  • now add ½ onion, 1 tsp ginger garlic paste and saute until the onions shrink.
  • further, add 4 aloo and ½ tsp salt.
  • saute for a minute making sure the aloo is coated well with oil.
  • cover and simmer for 5 minutes.
  • keep stirring in between to prevent from burning.
  • now sprinkle 2 tbsp water. cover and simmer for 5 minutes or until the aloo is cooked well.
  • further, add ¼ tsp turmeric, ¾ tsp chilli powder, ½ tsp cumin powder, ½ tsp garam masala and ½ tsp aamchur.
  • mix well making sure all the spices are well combined.
  • also, add 2 tbsp coriander and mix well.
  • finally, enjoy masaledar aloo fry with roti or as a side dish with rasam.
