aloo paneer recipe | alu paneer masala | potato paneer curry with step by step photo and video recipe. paneer or aloo based north indian gravies are very common across india. both aloo and paneer takes the center stage in their respective curries with other vegetables as supporting ingredients. but this recipe of aloo paneer recipe is unique where both takes the center stage making it a classic potato and cheese based curry.

as i mentioned previously, this recipe of aloo paneer masala is a combo fusion of 2 curries. basically you could potentially make this curry with either aloo or paneer. but the combination of both yields different and flavoured curry. moreover in this curry i have pan fried both diced potatoes and paneer separately before adding this tomato and onion based sauce. basically this helps to cook both aloo and paneer quickly and effectively. the paneer and aloo has different cooking temperature and hence cooking them separately and adding it later do not affect each other.

some easy and important tips and suggestions while making this rich and creamy aloo paneer recipe. firstly, do not dice the potatoes and paneer to small cubes. it has to be medium sized as the finely chopped potatoes and paneer may get dissolved. secondly, ensure to add approximately equal amount of paneer and potatoes to this curry. each ingredient should not overpower the other and hence both have to be balanced. lastly, you can experiment the same curry by adding the baby potatoes in the place of diced potatoes. you can have a look at my dum aloo curry to understand the usage of baby potatoes before mixing it with curry.

Ingredients
  

for roasting:

  • 1 tbsp butter
  • 1 bay leaf
  • 3 pods cardamom
  • 1 inch cinnamon
  • 4 cloves
  • 1 tsp kasuri methi
  • 1 onion, finely chopped
  • 1 tsp ginger garlic paste
  • ¼ tsp turmeric
  • 1 tsp kashmiri red chilli powder
  • 1 tsp corainder powder
  • ½ tsp cumin powder
  • cup tomato puree
  • 3 tbsp cashew paste
  • 1 cup water
  • 1 tsp salt
  • 2 tbsp cream
  • 2 tbsp paneer / cottage cheese, grated
  • ¼ tsp garam masala
  • 2 tbsp coriander, finely chopped

Instructions
 

  • firstly, add 1 tbsp butter and saute 1 bay leaf, 3 pods cardamom, 1 inch cinnamon, 4 cloves and 1 tsp kasuri methi. roast until the spices turn aromatic.
  • now add 1 onion, 1 tsp ginger garlic paste and saute until the onions turn golden brown.
  • further add ¼ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder and ½ tsp cumin powder.
  • now add 1½ cup tomato puree and saute until oil is released.
  • also, add 3 tbsp cashew paste and saute for a minute.
  • add in 1 cup water, 1 tsp salt. mix well.
  • furthermore, add roasted potato and paneer.
  • cover and boil for 2 minutes, or until the flavours are absorbed.
  • add in 2 tbsp cream, 2 tbsp grated paneer and mix well.
  • turn off the flame and add ¼ tsp garam masala and 2 tbsp coriander.
  • finally, enjoy aloo paneer masala with roti or chapati.

how to make alu paneer with step by step photo:

  1. firstly, in a large kadai heat 4 tsp oil and roast 3 potato.

  2. once the potato turns golden brown, keep aside.

  3. in the same oil roast 16 cubes paneer until they turn golden brown.

  4. once the paneer turns golden brown, keep aside.

  5. further, add 1 tbsp butter and saute 1 bay leaf, 3 pods cardamom, 1 inch cinnamon, 4 cloves and 1 tsp kasuri methi. roast until the spices turn aromatic.

  6. now add 1 onion and saute well.

  7. also, add 1 tsp ginger garlic paste and saute until the onions turn golden brown.

  8. further add ¼ tsp turmeric, 1 tsp chilli powder, 1 tsp coriander powder and ½ tsp cumin powder.

  9. saute on low flame until spices turn aromatic.

  10. now add 1½ cup tomato puree and saute until oil is released. to prepare tomato puree blend 3 ripened tomatoes in the blender.

  11. also, add 3 tbsp cashew paste and saute for a minute.

  12. add in 1 cup water, 1 tsp salt. mix well, adjust consistency adding water if required.

notes:

  • firstly, roasting paneer and aloo makes curry more delicious.
  • also, adding cream is optional, however, it makes curry rich.
  • additionally, cook the tomato puree well, else the raw flavour will remain.
