in udupi cuisine bhindi pakora is known as bende gatti baje recipe which literately means hard pakoras. unlike other pakoras, this fritter has a hard texture because of the rice flour and besan flour combination. hence it is referred as gatti baje is mainly prepared during religious ceremony feast because of the no onion usage pakora. it is served as condiment after the rasam rice serving and just before the sambar rice serving.

okra frittersfurthermore, some important tips and recommendations for a perfect, crispy and savoury bhindi pakora recipe. firstly, i have finely chopped the okras which is then mixed with besan and rice flour batter. alternatively, the whole bhindi’s can be deep fried with the same batter, very similar to mirchi bajji. secondly, i have not added any water or moisture content to prepare the batter. and i recommend the same as the okra would release its sticky latex with the moisture. lastly, deep fry these pakora’s on medium flame so that the pakoras cook evenly.

Ingredients
  

  • 10 bhindi / okra / lady finger
  • 2 green chilli, finely chopped
  • 1 inch ginger, finely chopped
  • few curry leaves, chopped
  • ½ tsp turmeric / haldi
  • ½ tsp kashmiri red chilli powder
  • pinch of hing / asafoetida
  • ¾ cup besan / gram flour
  • ¼ cup rice flour
  • ½ tsp salt
  • oil for deep frying

Instructions
 

  • firstly, clean and wipe the bhindi well making sure there is no moisture before chopping finely.
  • further add 2 green chilli, 1 inch ginger, few curry leaves, ½ tsp turmeric, ½ tsp chilli powder and pinch of hing.
  • also add ¾ cup besan, ¼ cup rice flour and ½ tsp salt.
  • combine all the ingredients well without adding any water.
  • also squeeze the bhindi well to release moisture and make dough moist.
  • now take a small ball sized dough and drop into hot oil.
  • make sure to spread the dough and not pile up one over another.
  • fry on medium flame stirring occasionally.
  • also fry till the pakodas turn crisp and golden brown for approximately 15 minutes.
  • finally, serve crispy bhindi pakoda with green chutney along with masala tea.

notes:

  • firstly, replace rice flour with corn flour to make bhindi pakoda (bende gatti baje) more crispy.
  • also make sure not to add any water while preparing dough.
  • additionally, fry on medium flame till the pakodas turn crispy.
  • finally, bhindi pakoda (bende gatti baje) stays good for a week when stored in a airtight container.
